Methods:

Pull out your mixing bowl and beaters. In your bowl, add chilled heavy cream, sugar, and vanilla extract.

Start to mix the ingredients. Adjust the mixer speed to lower to prevent the ingredients from jumping out of your bowl. After the ingredients are mixed roughly enough to prevent them from scattering around, you could increase the mixer speed to medium-high.

Keep proceeding until you notice the cream volume increase nearly double. It might take a bit of time to reach this level, but after noticing your whipped cream start doubling in size, everything will be much faster by then. From that stage, you will want to decide the level of peaks you choose.

The melted ice cream-like texture notices the soft peaks. As you lift your mixer, it will leave unique swirl marks.

How to cook Roasted Garlic Parsnips? A couple of weeks ago, I was at the farmer’s market and I stumbled upon these huge parsnips. Parsnips are root vegetables that are closely related to carrots and have a spiced flavor in comparison to a carrot’s sweet flavor.

Parsnips are typically used in soups, stews, and as roasted vegetables. I have used parsnips in stews, but I have never roasted them before. I thought Roasted Garlic Parsnips would be a quick and easy last minute side dish.

First, you would need to clean and peel the parsnips and cut them into equal sizes. I cut them similar to steak fries, but you can cut them however you like. Next, coat a baking sheet with cooking spray and spread the parsnips on the baking sheet. Drizzle with olive and salt and pepper to your taste, and then place in preheated oven.

While the parsnips are baking, mince 4 cloves of garlic and sauté in a sauce pan with two tablespoons of olive oil and 1 tablespoon butter. You just want to cook the garlic until it becomes fragrant. Once the parsnips come out of the oven, pour the garlic mixture over the parsnips and sprinkle with Parmesan cheese. They came out crispy on the outside and soft on the inside.

Instructions

• Preheat oven to 425°F.
• Wash and peel parsnips.
• Cut parsnips into equal sizes.
• Coat baking sheet lined with foil with cooking spray.
• Spread parsnips on baking sheet and drizzle with olive oil and sprinkle with salt and pepper.
• Bake in preheated over for 20 - 25 minutes until soft.
• While parsnips are baking, heat olive olive oil and butter in pan. Add garlic. Cook garlic until fragrant.
• When parsnips are done, sprinkle with Parmesan cheese.

Do you have a spot in your garden that could use a dramatic focal point, or does your entryway need a bit of a pick-me-up? Or perhaps you’re short on space, and you need to plant “up” instead of “out.” No worries — whatever your garden needs or challenges, this project is for you.

I’ve been creating these triple decker planters for both myself and my landscape clients for years now, and it never fails to pack a punch in a small footprint. And the best part? You’re likely to have everything you need, aside from the plants, right at your fingertips.

Materials

3 planters in graduated sizes (One should be able to fit into the next larger size. I’ve used 24”, 16” and 8” terra cotta pots.)

Sturdy, empty black nursery pots (bricks or cinderblocks can be substituted)

Potting soil appropriate to the type of plants you are using

A variety of 4” plants, with one larger plant (quart or gallon size) for the top planter

A variety of topdressings appropriate for your plants (bagged decorative moss, pea gravel or smooth river rocks)

Directions

Place the largest container in its permanent spot — when it’s completed, this project can be a heavy one, so you won’t want to move it.

Take your inverted black plastic nursery pot and place it inside the largest container, then place your medium-sized container upright on top of that. This not only raises the 2nd container to its desired height and provides support, but takes up space so you are not forced to use expensive potting soil to fill up your largest container. Remember, you can also use stacked bricks or cinderblocks here.

Fill both the large and medium containers up with soil, stopping 4” below the rims.

Place the smallest container on the soil surface of the 2nd container, and halfway fill it with soil.

Now start planting in the rings that were created in the large and medium containers — 4” nursery sizes work well. Simply remove the plant from the nursery pot and pop it into the rings, and fill with soil in between the root balls. I like to push each root ball up against the next one for a tight fit, and for an instantly full and lush look. For the top planter, plant one larger specimen plant, or use a decorative element like a gazing ball or a seasonal pumpkin.

Now finish up by tucking in small handfuls of decorative moss, gravel or river rock in between the plants, completely covering the soil surface. This conserves soil moisture and provides a professional finishing touch.

How to make sauerkraut?

One of the first veggies we’ll be pulling out the garden is going to be cabbage. That means it’s going to be time to make sauerkraut soon!
Sauerkraut is one of the easiest and most common fermented foods produced.

It can be made with about three ingredients and with materials you probably already have in your kitchen. And it lasts. After fermenting (at least three days, depending on personal preference), it can be kept in the fridge for a long time — but if you’re a fan of kraut, like me, it won’t last a week.

Fermented foods, like kraut, are not only tasty, they’re incredibly good for you. Sauerkraut contains all sorts of great, beneficial bacteria that are excellent for improving the digestion of food and for boosting the immune system.
Fermenting also makes nutrients more available for the body and makes them easier for the gut to absorb.

Here’s the instructions:

Materials needed:

• About three heads of cabbage
• Salt (sea salt is preferred, but any table salt will do, including iodized salt)
• Water
• A bowl
• A shredder
• A crock or other container big enough to hold the cabbage water mixture (about 2-3 liters)
• Weights (can be specifically designed weights or can be plastic zipper bags filled with water — more below)
• Mason jars with lids and rings

Directions

First, shred your cabbage. Use your own judgment here, regarding how small you’d like the shreds to be. I prefer mine to be fat, crunchy shreds of cabbage. (you may also need this to help: cuisinart 14 cup food processor)

Once the cabbage is shredded, add 2-3 tablespoons of salt. Be careful not to oversalt the cabbage, as if your kraut is too salty, it will be near inedible. Stir the salt into your shredded cabbage.

Squeeze the cabbage and salt mixture with your hands. The goal of this process is to press the water out of the cabbage, creating a cabbage juice and salt mixture. This will take some time. Usually about 5-15 minutes is enough. You’ll know you’re done when you can pick up a handful of shredded cabbage and squeeze it out like a wet sponge.

Pack the mixture into your crock. You can use a ceramic crock (some of which are specially made for fermenting, like this one) or you can use any sort of bucket or glass container you may have. Make sure the cabbage juice is deep enough to cover the cabbage shreds. If not, add salt water (2 tbsp. per quart of water) to the mix, just enough to cover the shreds.

Place your weights on the mixture. The idea is to push down the floating shreds and prevent them from being exposed to oxygen in the air. This prevents mold growth. As mentioned previously, the weights can be purchased, but you can also use a zipper bags filled with water. Some people go so far as to watch actual stones and use them. If you go this route, make sure to chose non-reactive stones (granite, quartz, etc.).

Cover the container of kraut (with a lid, or with a cloth tied around the opening of the container).

Put it on your counter. After about three days, you should have sauerkraut. Taste it! If it’s krauty enough for you, it’s done. If not, then let it sit longer, checking it daily until it hits the krauty level you desire.

Once that’s done, take the kraut mixture and pack it into mason jars, cap it off and stick it in the door of your fridge. Eat as often as you like.

That’s it. Really.

If your kraut develops mold, toss it out and start again.

Homemade Golden Crescents: It smells like the holidays in my kitchen, it smells like yeast rolls! Whenever I smell these rolls baking it, always reminds of the holidays.

Why? Because this is my mother’s homemade rolls recipe. She has been making these rolls for as long as I can remember for Thanksgiving and Christmas. Everyone in my family LOVES these rolls. And you will too!

These rolls are light, buttery, and tender. What’s great about these rolls is that they are no knead. Once you mix the flour mixture, you are done to let the dough rise. Once risen, you divide the dough in half and roll out each half into a circle. Then you cut into 16 pieces to make the crescents.

This is also the part where you add melted butter on top of the dough before you cut them into triangles. You can save some calories on this step by adding less butter. Or you can add more wink.

Once rolled, you can use whatever greased pan you like. I used a half-sized baking sheet. Once they rise, they are good to go in the oven.
Simply delicious!


Homemade Golden Crescents:


Ingredients

• 2 packages active dry yeast
• 3/4 cup warm water (105° to 115°)
• 1/2 cup sugar
• 1 teaspoon salt
• 2 eggs
• 1/2 cup butter, softened (1 stick)
• 4 cups all- purpose flour
• extra melted butter

Instructions

1. Dissolve yeast in warm water, until nice and bubbly, about 10 minutes.
2. Stir in sugar, salt, eggs, butter and 2 cups flour.
3. Beat until smooth. Mix in remaining flour until smooth.
4. Scrape dough from side of bowl.
5. Cover and let rise in warm place until double, about 1 1/2 hours.
6. Divide dough in half. Roll each half into 12-inch circle.
7. Spread with butter and cut into 16 wedges.
8. Roll up each wedge, beginning at rounded edge.
9. Place rolls, with point under, on greased baking sheet.
10. Cover and let rise until double, about 1 hour.
11. Preheat oven 400°F.
12. Bake 12 to 15 minutes or until golden brown.
13. Brush rolls with extra melted butter.
