The universe took billions of years to form, there have been earlier creatures before man came to be. These animals lived millions of years ago. Most of them got buried under the sea and rocks to form what we call crude oil, coal and natural gas.

Those that were not buried under high pressure have their bones and carcass dug up or excavated. These remains is what is called fossils.

The quantity of carbon the animals consumed in its life time is calculated and then comparing it with the radioactive half life of carbon, you can deduce how many years ago that animal was alive or died. Because carbon consumption stops at death.

The same goes for plants too.

These things take a very very long slow process.
