Why does it always turn yellow? Is it some kind of fungal growth or what? Why not green or red?

The yellow substance is called - mould, & It causes Aflatoxins( a toxic substance), It start growing on the maize, due to the moisture level in the maize. .
When maize is harvested early, the moisture content can be very high, as high as 37%. The maize has to be dried until it attains a moisture level of 12%, which is the recommended level for long-term storage.
