it's a big punishment for me , I wish I have something doing while at home anyway, thinking of getting myself a jogging footwear to jog around in the morning but their are pet owners who carelessly moves around with dogs , some without chain, I will have no choice than to hit the dog hard if they attempt to bite me but I'm afraid I wont be able to pay if the dog die , so I'm in big pain because I love activities but there is nothing to do, so I'm just so useless. |

Oatmeal Cookies
112g margarine ½ cup white sugar ½ cup brown sugar 1 egg ¾ cup flour 1 tsp vanilla extract ½ tsp cinnamon ½ tsp baking soda ¼ tsp baking powder (optional though) 1½ cup oat ⅔ cup raisins (optional)
Mix your sugar and butter till it is light and fluffy Add in the vanilla and egg and mix till it is even Sieve in the baking soda, powder, cinnamon and flour and fold in Lastly, gently add in your oat and raisin. Fold in carefully...you don't want to over mix You should refrigerate for 30 mins or so...not compulsory though Shape in ball and bake in a preheated oven for 10 mins. Remove once the edges are brown. The middle will be soft but don't be tempted to leave it in. Once it cools, it will be nice and chewy
You can also use cold butter. It helps the dough not to over spread. Check the pics on how the ball should look like Viola!!

this is why residents were advised not to share food in Lekki, it is good to give but you have to be careful, investigation revealed this estate shared food items for people around and the news went round that they were sharing food in Lekki , the news attracted lots of people but mostly women and children but few boys . if you want to give food items around Lekki, just hand it to security operatives , church or an NGO to do it for you or you will be inviting crowd and area boys you won't be able to control and may end up attacking your Estate.

armyofone: Please how do you make your sausage roll? Filling. The sursage meat is already well seasoned , you will only need to add little pepper , Oregano and pinch of Knor cube as maggi is usually salty . mixed well, blend well with spoon .
mix your pastry to give you soft crispy dough , roll it very flat on a clean surface , paste enough sursage by the edge and roll it, coat it with egg and send it in the oven . that should do the trick . |

like someone said, people who post their account number online are hungry people who are desperate to survive , but I do not think only account number is sufficient for the fraudster to move money into your account and then move it out without your consent , after all churches, mosques, NGOs and Co. do make their account details public .
however, I will say it's unwise to do so, because in a place like Mexico, cartel can move money to your account having monitored you very well, then kidnap you in attempt to get their money back.
also a criminal gang can send money to such accounts just to distract investigators when they are closing in on them , even with no intention of getting it back, its called shaking off tail.
Shake off one's tail comes from detective slang: to tail someone is to follow him (usually surreptitiously); the tail is the person who follows. To shake off the tail is to evade the follower.
but this time the criminal just want to use you to create confusion for investigators, just like armed robbers mentioning innocent people as their gang members , trust me in a place like Nigeria, it's not certain you'd be seeing your family in a long time by mere mentioned of your name in such case talkless of when money is sent to your bank account.

Do you use same recipe or you change recipe? I'm referring to the 'not consistent' issue.
I use 3 tablespoon of butter for 2½ cups of flour. I add the butter when kneading. I activate my yeast in sugar/milk warm water before using it. Also note that using too much sugar to activate can kill your yeast. Using 2 tsp sugar to activate 2 tsp yeast.
For the flatness issue, I always preheat my oven before baking so the heat is evenly distributed. I don't know the recipe you're using but ensure you knead your dough till it is soft and elastic..a mixer works well for this... however, I use my hands cos that's not available and it works perfectly for me.....bake/knead the pains away  You should also proof your dough till it doubles in size. This should take about 40mins to 1hr. Sometimes, my dough starts rising even when I'm kneading...... Lemme drop my recipe
2½ cups flour 3 tbsp sugar + 2 tsp for proofing 1 egg 1½ - 2 tsp yeast I warm milk or water 3 tbsp margarine or butter Mix the sugar with warm milk or water Sprinkle your yeast in the milk mix. Cover and allow to proof. The yeast is active when the mixture is spongy (foams) Add in your egg, sugar and flour. Mix till they all come together. It's usually very well sticky Transfer the dough to a floured surface. Knead..add the butter, knead till the dough is soft and elastic. Kindly note that the dough will be very sticky. Don't be tempted to add flour or butter. Just knead till the gluten forms. This is usually hard work for me. Sometimes, I get muscle cramps and will leave for a while and continue. Transfer to an oiled bowl. Cover and allow to proof for 50mins or until double it size. Deflate the proved dough, cut into small pieces. Roll and shape into your desired sizes and shapes. Cover and allow to proof for about 20 - 30mins. Coat the dough with egg/milk wash Bake in a preheated oven for about 10 - 20 mins. Depending on the sizes
For my above bread, I used Tangzhong, a Japanese technique for making the bread soft and fresh

Homemade milk bread.....went down with Sorrel (zobo) drink. The bread was very soft and yummy Dear Chef Akpos, I see your breads are always looking soft, as if i should snatch it from you,'the results I get are not consistent, sometimes hard, some times a little soft , I don't know what I'm doing wrong. Do you add butter in your bread and if so, what quantity ratio? and at what point? do you add dry yeast or mix your yeast in warm water? how do you ensure the dough doesn't fall flat in the oven? the last one was tick as the butter didn't allow it to rise at all , and it went flat, may be I do add much water or something . I always struggle making bread. |
