for tennis, you look at their stats on sofascore, then you allow the games to progress into midway in first set, if your playing is doing very well then you go for him.

For volleyball you look at stats of the on going game, if a team is having a long winning streak on that particular set i usually go for the team to win all three sets, an exmple is below.
