I can't really give a detailed step by step guide but i'll try to simplify it.

Bone the long post, The process is actually quite easy but it may seem daunting at first. Just follow the online guides on sites like XDA forums and you'll be alright. Apart from downloading the files the entire process doesn't take longer than 20 Minutes.

You are going to need
a. A Laptop
b. A good USB cable
c. The SGH-M919 with a fully charged battery.
d. An internet connection

You'll only need the laptop for the first 2 steps. You need a software called "Odin". Its very light so no worries.

1. The first thing you'll do is root the phone. Google "How to root SGH-M919 using odin" on google and follow the XDA instructions.

2. Next you'll have to install something called a Custom Recovery. It's what you'll actually use to install the ROM. There are many options including Clockwork Mod, Philz Recovery and TWRP. I use TWRP its a good one.

Once again go and Google "How to install TWRP recovery on SGH-M919".'

3. The third and final step is installing the actual ROM. Once again there are so many options but since you want Nougat 7.1.2 and possibly Oreo when version 15 is available you'll want to try "Lineage OS version 14.1" you'll have to download it its about 500MB as well as "Google Apps" or "G Apps" for short.(about 170MB)

Google "How to install Lineage OS 14.1 on SGH-M919"

You'll then wipe and install (or "Flash" as they call it) the ROM first and then the G Apps Package. That's all.

In all this remember to google to clarify any questions you might have.

I have this exact same phone.
You can root your phone, install a custom recovery and then install a custom ROM.
You can try Lineage OS ROM, Which is the one I use.

There are alternatives for you to pick from but lineage is the only 7.1 ROM I could find

Seems the condition hasn't really bothered you yet. Obviously you aren't impotent. The prostitute encounters of course you were very nervous and as such couldn't perform. It happens. The Other times your nervousness and expectation that you wouldn't perform must have been the cause.
Please see a doctor. No shame in that. Imagine a lifetime without sex simply because you won't see a doctor. The fact that you sometimes get erections means you are most likely fine sir.
