Quick one, yeah. Sorry is there a certain rice you use when making the Nigeria jollof rice, and what sort are we talking about here.

This jollof rice doesn't look like the one I'm familiar with, does it still count as jollof rice?

It's done with Basmati rice if you want or with the regular rice grains.

Dirty Jellof rice. Not cooked by me oooo. Just ate it somewhere.

First of all, wash you goat meat, season it with salt, Maggi, pepper and onions. Bring it to boil.

Pour water enough to cook the meat until tender. You can cook your plantain inside the meat as it's cooking or you cook the plantain in a separate pot.

Then when the meat is done and tender, add crayfish,uziza and utazi. Allow it to simmer for a bit and turn your pepper soup.

Your pepper soup is done. Some use scent leaf in place of utazi. It depends.

Then dish it with the plantain.

Plantain oooo. You can use half ripe or unripe or ripe. It depends on how you want it.
