I stole meat from our kitchen stew once and the smell lingered until my mum called us in one after the other. The little strand of goat meat in between my teeth plus the pungent smell of finger-licking stew had barely left me, so I gave up cheesy

But mum didn't leave no voice messages, She gave you a little sermon to help you digest the meat you'd swallowed in a hurry, then she adjusts her wrapper with one hand already firmly gripping your wrist before giving you her trade-mark ear-rubbing exercise. Dad did the bulala thing if He was in a good mood otherwise His silence had a weird writing on the wall for days because you never know what you might do next and you will be reminded of some past sin,
My sibling and I remind them every now and then when we visit and they don't stop laughing about those times cheesy : grin.

Praise be to God that those discipline has helped to shape us. My kids (and most kids this days) don't understand all of this mummy's pot or not they just asked you authoritatively and if you say no, they start acting-up, mscheeewww

Mum likes to add tomatoes but I don warn her tire say I don't likey.
So, she doesn't add anymore. I love it without and usually, in fact, always with rice.  . . . .

I still don't know what Efo is. Prolly I do but call it sum'n' else.

How I do jollof rice is this[b] put water on the fire, add all the ingridient to the water, including tomato paste, pepper, maggi salt and boil . when its boiling add rice, turn the heat down and watch it burn away.

Like 1/5th of the rice gets burnt usually and I have problems washing the pot and cleaning out later

Ingredients

Meat(beef, goat, ponmo or beef tripe; cut into little pieces)
Onions (chopped or ground with pepper)
Ground red pepper
Ground crayfish(optional)
Utazi leaves, chopped (optional)
Salt
Water
Spices

Directions
Put the meat in a pot and add some water.
Add onion and salt and let the meat cook until well done but not too soft.
Add the pepper and spices, stir it well.
If using crayfish, stir that in as well.
Cover the pot and let it cook for 20-30 minutes.
If using utazi leaves, add it and let the soup simmer on low heat for 10 minutes.

Note . . . .


In the first step, make sure to add little water. since meat produces its own, it's better to add as you cook if needed,
Dry or fresh fish can also be used as a substitute for meat and for a different taste,
This is meant to be spicy but everyone has different pepper tolerance.

Yes it is but it requires attention.

This is what I do . . . .

After adding all ma ingredients, I stir immediately [ before it starts boiling] and stir no more.
Then switch the heat to low. It works for me.

Fried rice

Ingredients


Rice
Chicken
Chicken broth
Carrots(diced),peas,string beans(snapped),sweet corn,green pepper(deseeded and diced),cabbage(sliced thinly), red kidney beans
Kidney(cooked and diced)
Curry/thyme,nutmeg (grounded),fresh garlic(ground),Onions(sliced)
butter/vegetable oil
Salt/seasoning(royco cubes are very good and smell nice too)
White pepper or camerounian pepper(I prefer the camerounian pepper, because of it's aroma)


Instructions

Wash the rice properly, and boil until half done
Season the chicken with the curry,thyme,garlic,royco cubes, salt,onions
allow to marinate for atleast 30 mins, then cook with a little water until properly done
Remove the Chicken from the broth
Deep fry the chicken until the coat is lightly browned
Drain
Pour fresh vegetable oil or butter into a pot
Fry onions until browned
Add carrots,cabbage,peas,string beans,kidney beans,kidney,sweet corn,green pepper
curry(I like to add yellow food colouring,because curry does not make the rice yellow enough), thyme,nutmeg,pepper,seasoning(royco cubes),salt
Fry for 2 mins,
Add broth(check to make sure it will cook the rice,if not enough add a liitle water)
Cook for 15/20 mins until the rice is done
Serve with the Fried Chicken


-the rice should be a liitle hard and the veggies should still be crunchy

Dayo,

This is one of the few methods I use.
Jollof rice

INGREDIENTS
white rice
tomatoes and 1 bell pepper (without seeds if you don't like things too hot)
OR 8 ounces (or about ¼ liter) canned tomato sauce and 3 ounces (or about 90 milliliters) canned tomato paste
Onion
Salt
Dry Red Pepper (like Cayenne pepper)
Meat broth (about 1 cup or ¼ liters) or Magi cubes (about 4)
Water 


Instructions

Unless the rice is pretty clean, you will want to rinse it before cooking it.

Put the rice and water into a pot and place on high heat. (Some people prefer to boil the water and add the rice to boiling water. This is fine too.)

If you are using fresh ingredients (the tomatoes and pepper) blend them until they are smooth in texture (you can also grind the onion with this mixture).

Let the rice cook 10-15 minutes.

Add either the tomato/pepper mixture or the tomato sauce and tomato paste. If you have not added the onion, you can slice or dice it now and add to the pot, depending on how large you like your onions.

Add enough water to allow the rice to complete cooking (since you will not be draining the rice, it is better to add too little and check up on it often, than to add too much).

If you have any meat broth from boiling any meat, you can add it to this as well. Otherwise,
unless you are a vegetarian, suggest adding about 2 magi cubes for taste.

Add salt to taste, and about ½ a teaspoon of dry red pepper (as the rice is cooking, or as you are eating the finished product, you can add more of either one of these so I really suggest starting out small, also useful if different people who will be dining have different tastes).

Allow the rice to continue cooking until the rice is soft. If it is not dry at this point, then switch the heat to low to allow it to dry the excess water without making the rice much softer.
Once cooked, add more salt or pepper to it if you wish.


You can boil and fry chicken to go with this.
