There is no clear difference akpu and fufu.
FUFU is a general west African name for swallow while akpu is a native igbo name for it.

And let me also remind u that yoruba version of fufu is unhiginically and poorly processed and also acidic reason's it has dented colour compared with igbo version...reason most igbo and others tribe don't like buying yoruba fufu.
