My mom likes having plantain flour at home cuz she makes moin moin with it.
I cried (literally) to my mom to send me authentic plantain flour.

Around 2019-2020 a friend usually takes me out on a treat to a popular nearby bar anytime I visited him . They refer to the place as “elede” in Yoruba cos the woman sells fresh fish pepper soup which she garnishes with dry crayfish when serving .

The pepper soup will be prepared in ur presence so it was easy for me to learn the recipe and procedure just by watching .

Basil leave , onions, ginger , garlic, and fresh cameroun pepper is blended in manual blender after which it is transferred to the fire and allowed to cook for minutes before adding pepper soup spice , crayfish seasoning , salt and the fresh fish . When the fish is well cooked , the pepper soup is served and already washed dey crayfish is sprinkled on the pepper soup .

I decided to replicate that this morning and it was a banger ! Hot, spicy and delicious 😋

Method
Soak your beans,wash and take to the mill.
Tell the person grinding it not to add TOO MUCH water.
Just little is enough for grinding.
Back home add a pinch of salt

Get a wooden spatula I prefer using my hand though,beat the grinded bean in a bowl in clockwise direction for some minutes until a fluffy consistency is achieved.
Get your Local kogi oil
Heat it on fire add onion.
Start using your spoon to cut the fluffy beans inside the oil.
It's a very simple method maybe because I was born into it though.
I discovered all the places I have lived neighbor always talk about my Akara whenever I serve them and myself don't see it as a big deal.
