New experiment: To cook Jollof rice with no oil...and it worked! cheesy

My meat was seasoned and boiled using onions, pepper, curry, thyme, nutmeg, maggi, and salt. Once cooked, I simply drained out the water, placed the meat on the grill and popped into the oven to slow cook for just over 30 minutes, medium heat. Again, absolutely no fry-fry or oil involved.

Outcome? It looks and tastes like fried meat, only better! kiss kiss

Your macaroni cheese looks lovely. It's been eons since I had that...(sigh)

That is highly nutritious. I like smiley
About ur moin moin. Did u place the plastic in boiling water to cook?
Your plantain does not look fried. What did u do to it

Thanks Yadoc smiley

Yep, I placed the plastic plate in boiling water to cook at high heat, but was careful to make sure the boiling water didn't "jump" into the moi-moi while cooking. I used half a tatache pepper for it. Next time, I'll use a whole one to make it even redder.

And nope, the plantain is fried. I think it's the brand / type of plantain I used + the oil was very clean, straight out of the bottle... smiley smiley

Lol @ the bolded! grin grin grin

Yeah, I too had my fair share of beans for either breakfast, lunch, or dinner whilst growing up in Naija. Infact eh, so many combinations:

~ Beans and soaked garri
~ Beans and yam
~ Beans and sweet potatoes
~ Beans and dodo / over ripe plantain (Herzumpther o! tongue tongue kiss )
~ Beans and bread

Or just plain beans porridge, moi-moi / akara and akamu. Hubby and I still love it, though the kids aren't beans fans like us. cheesy cheesy

touchmeder:
1st pic yam and some turkey carrot sauce. I got the recipe off a nice blog and it tasted good.

2nd pic spaghetti with avocado. That green stuff in the middle is curry leaf. If you love garnishing with coriander & co and its not readily available, curry leaf is a great substitute personal opinion

That Turkey carrot sauce!! What website did you get it from please ?

Nice and creamy

My Mac and cheese recipe

Elbow macaroni
Two eggs or three eggs depending on qty
Velvettta cheese
Sharp cheddar cheese
Oil
Tin milk
2% milk
Parsley flakes or basil( optional)
A tiny bit of diced onions or onion flakes
I maggi

Cook macaroni uncovered till it boils and drain water
Add 2 % milk to cover macaroni, add your beaten eggs,I can of carnation milk,1 cooking spoon of oil,Velvettta and cheddar cheeses, one maggi and some very little onions
Cook covered in very low heat till done
Add your parsley flakes and cover for 10 minutes then serve

Please no salt
The cheeses have salt

I promise you it will be yummy
For added yummy ness place in a baking pan after cooking and brown the top

Looks really nice. Thanks for the recipe, will try it soon.

Biko use oil in your rice if you want to
A spoon of oil no go kill person
The starch has more calories than the oil
Just use no cholesterol oil or switch to extra virgin olive oil

I use canola oil no cholesterol

Like you I don't fry any meat
Grilled always and it looks and tastes great

Ok, I decided to make some nkwobi two days ago. Haven't been active in the kitchen for long as I am gradually surrendering the sovereignty of that office to the rightful holder of the suzerainty.
