Hi!


I went to the market today and stumbled on one stuff that the Hausa man called 'bitrus', I later discovered the name is beetroot. Here's my question, what can i prepare with it?? Onye Hausa say make i put for my jollof rice, but I doubt. Any ideas?

I don't know about using it for jellof rice but you can add it while making fruit juice.

Beetroot the super food...very rich in Iron, Vit C, Vit A, enhances skin complexion(this is a fact) good for people fighting anaemia...

I eat it as salad in almost all my dishes...

Get the bulbs, wash well, boil in water until soft. ( I drink the juice, it has this corny taste) Peel the skin, grate like you would carrot or okro...and eat straight up or add to rice as a side dish, eba, whatever...or mix with mayonnaise! Your palate would get used to it with time as it is not bitter or very sweet...I'd say bland.

If you eat too much of it, your pee or poo may turn red(that's from its very reddy colour)...lol...

Sorry i'm just seeing this. I looked through her site but it seems like she has upgraded and unfortunately i cant find that particular recipe anymore lipsrsealed

You may want to look through and see if you like something else. The lady is pretty good with these Chinese inspired sauce which you can eat with white rice or yam. That's another of my favorite http://fruitfulkitchen.org/black-pepper-beef/

Ingredients
Potatoes
Butter
Cream Cheese, Softened
Seasoned Salt
Black Pepper


Preparation Instructions
Peel and cut the potatoes into pieces that are generally the same size. Bring a large pot of water add the potatoes. Bring to a boil and cook. (Cook on low heat to enable it cook and steam rather than cook violently on high heat) When they’re cooked through, the fork should easily slide into the potatoes with no resistance, and the potatoes should almost, but not totally, fall apart.
Drain the potatoes. When the potatoes have finished draining, place them back into the dry pot and put the pot on the stove. Mash the potatoes over low heat, allowing all the steam to escape, before adding in all the other ingredients.
Turn off the stove and add butter, cream cheese and mash! Next, add Seasoning Salt and black pepper.
Stir well and place in a medium-sized baking dish. Throw a few pats of butter over the top of the potatoes and place them in a 350-degree oven and heat until butter is melted and potatoes are warmed through.

I served with sweet corn, green pees, carrot and syrup. You can serve as you want.

Did I forget to add I learnt it on DSTV food station? Yeah I did lol.

Procedure: I blended oats and ripened bananas with a bit of water. You can add more oats to thicken the consistency. I then mixed honey(used a lot) nutmeg, cinnamon and some pumpkin seeds with the banana&oat mix. Put in bowl and garnished with pumpkin seed.

Oven time: at your own discretion. preheat oven 150 degrees for 15 minutes, set bake in for 35-discretion...

Outcome: The whole house smelt of fried plantain. The cake/bread/muffin grin was extremely sweet(I guess too much honey) but it was delicious ...

Easter lunch..

Roast duck and Sage & Onion stuffing served with Brussel Sprouts, baby carrots, roast potatoes, Frankfurt sausages, and gravy, with orange juice to go.

Dessert: chocolate muffins, bananas, and pears.

Seen it used for Salad way back in Jos. The first time I saw it too. Not sweet, not bitter, just there. So Reddish.

Its just very simple.

Ingredients.
Veg
Pepper
Tomatoes
G/oil
Maggi
Salt
Onion.

Cut your veg , grind or slice your pepper and tomatoes (Little quantity). Put your pot on the fire and add very little quantity of G/oil, add onion and allow to steam a bit (without getting burnt) add your grinded pepper and tomatoes mixture and allow to cook, add a cube of Maggi and salt then allow to cook, add your beg and cook for about 3 to 5 minutes and serve. ( sometimes I leave for 2 minutes, veg is not suppose to stay long on the fire.

Please know that you can always slice and grind your tomatoes and pepper as you wish. I used grinding stone for mine today, sometimes I use mortar and sometimes I slice slice or use blender or hand blender, the choice is yours and it shouldn't be too smooth. Also you can use any veg of your choice, I used green today, I wanted pumpkin leaf but could not get it around the house.
