Afternoon snack

Address on the way

Ripe plantain, eggs, green pepper, green peas, red pepper, tomatoes, onion, butter, spices.

Fry the plantain and set aside
Chop the ingredients
Stir fry onion, green pepper and red pepper with desired spices (I used salt, curry, thyme, ginger and garlic). Dont include tumeric as it will alter the colour. Then set aside
Break eggs and beat.
Then add what you fried and tomatoes to it and mix.
Grease your pan/pot with margarine/oil
Pour the egg mixture in it and arrange the fried plantain on it.
Cook/bake on low heat for few minutes (approximately the time it will take egg to fry)
Then enjoy...........
