Those tomatoes look like plum tomatoes so would have seared them too in the pan, steamed the green beans and drizzled a bit of olive oil once cooked.

Did you use palm fruit?

Yes I did.
I boiled the palmfruit, pounded and squeezed it out and kept.
I boiled my meat, stockfish , uyayak and fish with little water.
Then added the meat and stock to the palmfruit liquid and boiled till it was thickened. Seasoned to taste and added my atama leaf and boiled for 5mins.

I don’t think he just seared it. He might have searched the skin side down but the top felt different. There’s a glaze and crunch on the top of it m that you can’t really see but you feel and taste it when you bite into it.

But it was olive oil for sure on the fish. The veggies were buttered and seasoned as well. Now if only I knew exactly what he used cheesy

Jollof Rice With Mixed Vegetables



Ingredients

• Rice
• Carrots – 5 medium sized
• Green Pepper (Bell pepper) – 1 piece
• Chicken (whole chicken drumsticks or chicken breast)
• Pepper - to taste
• Salt (to taste)
• Onions - 2 medium sized bulbs
• Seasoning
• Tatashe (Red bell pepper)
• Habanero Pepper(Rodo)
• Tomato Puree
• Dried Thyme
• Curry powder.


Preparation Method

• Prepare tomato stew (Blend tomatoes, onions, Red bell pepper and habanero pepper to a smooth paste and cook.
• If whole chicken is going to be used: Wash and cut it into pieces. Cook with seasoning &2 bulbs of onions (chopped). The cooking time depends on the type of chicken. When done, grill in an oven.You may also choose to fry your chicken to give it a golden look which is more presentable.

I didn’t cook it but we ate it

I’ve been really slacking in the kitchen for a long time now. No motivation to cook.

Salmon with veggies ( this was so good. I’d pay for the recipe but I’m sure the chef would never give it)

Pasta and sauce

Seafood pasta shell with cheese, clams, squid and shrimp.
You can guess the recipes by smelling and tasting it... Looks good by the way
