Ingredients

Chicken, Turkey, Fish or Beef.
Yam tuber, plantain or potato
1 large onion, sliced
Minced ginger and garlic/ optional
Scotch Bonnet, thinly sliced OR hot ground pepper
Pepper soup spice mix/seasoning... you can get the grind one in the market, mix already.
Dry or Fresh mint leaves or any leaves of your choice
Seasoning cubes (Maggi or Knorr)
Salt to taste

Lastly Cold Beer or Wine


Preparation

1. Peel, wash and slice the Yam/Poteto/Platain into bite chunks. Set the poteto aside.

2. Wash and chop the chicken/Turkey/beef or Fish. Add the onion, ginger, garlic, seasoning cubes and salt to taste. Place on low heat and leave to simmer for 10 minutes to allow the meat to release its natural flavours.

3. Add poteto. Then add, pepper and pepper soup seasoning. Stir all nice, and allow to cook for about 20minutes or until the yam or poteto and chicken are almost soft. Make sure that the water is slightly over the contents in pot. Otherwise, add some more. Then add the mint leaves. Taste for seasoning and adjust if necessary. Then leave to cook till the chicken, yam or poteto are very tender.

Serve and enjoy hot with your favourite drink!

NOTE --- Please ignore that spirit that always say without pepper the soup is not pepper-soup. Then the spirit continue saying "add more pepper, more pepper"... Avoid it oh !! for sorry not to be your nest name while eating or when you wanna use the Toilet.

So, I went to the african shop to buy beans... It was worth it.. I remember my days in the school hostel when boiz will queue for my beans and that was the only food i was good at cooking.

I made the beans with smoked skumbia (i hope that is the spelling), so it has that smoked flavour...
It tastes better than it looks...
I have regained a new inspiration to make these meals, a neighbour of mine, appealed to me to teach her how to make Nigerian delicacies, may be it's something that will give me a new focus after I am done with my professional exams.

I never knew beans could be this celebrated cheesy
I never used to like beans, except when cooked with rice, but now I can say we're getting to know and understand each other better
