It's not advisable to avoid losing its nutritional content by overcooking.

Your okra should be the second to last ingredient you add, followed by your vegetables.
Also, reduce the heat when you add your vegetables (okra included) to avoid overheating.

It depends on what you want. I do fry mine at times if I don't want the viscosity. So if you want it plain, fry it. The fried one is very tasty. You'll like it.
