Probably maybe because not everyone can prepare it and get that "9th mile" taste, and it's native to Enugu, unlike moin-moin that is a regular staple and can be cooked by all

It depends on what you want. I do fry mine at times if I don't want the viscosity. So if you want it plain, fry it. The fried one is very tasty. You'll like it.
