How I make my tomato puree in Nigeria, I hardly buy from shops.


Tomato puree

Step 1.. Rinse the tomatoes under cool water

Step 2.. chop the tomatoes

Step 3.. Transfer to a pot and cook the tomatoes over medium high heat until they’ve released some of their juices and are tender, about 11  minutes.

Step 4.. Remove the pot of tomatoes from the heat and drain (separate the water they released) Allow the tomatoes to cool for like 5 minutes and  transfer to a blender and process until smooth.

Step 5..Transfer the pureed tomatoes into  zip-top bags or bottles and put in your Basil leaf(optional)and cover, place in the refrigerator, ready to use any time.

☆ For bbq (Chicken or Fish), add Rosemary inside the bottle not Basil.

In Step 4.. Drain the Tomatoes, separate the juice they released from the pot before you transfer to a blender.

Tomatoes stew Recipe for pasta or spaghetti.

INGREDIENTS
● Extra virgin Olive oil
●Garlic crushed
●1 Onion , finely chopped
●2 celery stick, finely sliced/ optional
● Beef mince
●Red wine half cup
●Tomatoes puree
●Basil
●Salt
●Pepper

METHOD

Step 1...On low heat, put in your oil in a pot, add the garlic and fry for 50 seconds,add your onion, once is soften add celery and cook for one minute.

Step 2...Add the mince meat, stirring until brown, add your red wine and cook for 2 minute.

Step 3...Add in your Tomatoes puree, season with salt and pepper, add 2 cup of cold water,  add your basil(like five leaf,don't slices it)cook for 1 hour on low heat(uncovered), until thickened, stir occasionally

Step 4...In another pot, Cook pasta in a large boiling salted water following packet directions, until tender. Drain and and return the pasta to the pot and reduce the heat, add your beef sauce to the pasta and stir, cook for another 1 minute, if too thick, you can add small pasta water....Serve with parmesan, optional.

NOTE :

●If you don't have mince beef, skip the part of adding the beef and red wine.. after stirring the onion celery and garlic, add your tomatoes puree and basil, after 3 minutes add your fish or any meat you want to use and cook for one hour.

●Basil is very important in this recipe

Yeah Rosemary is stronger than thyme, though they belong to same family.

Thyme can blend with other ingredients, but Rosemary can't, because of the strong bitter taste.
If your meal require rosemary, just add little.

I always use rosemary to make chicken soup, marinate chicken, fish, meat and oven bake potato. tongue

Nope. Ketchup has some stuff inside. Puree is just blended boiled tomatoes.

The tomatoes companies most times add beetroot to make the red colour deep. You will never know.
