Inspired by the lovely and amazing one and only Prestonn. cheesy I didn’t have all the ingredients at home so I had to improvise a little but it was exactly the kind of food I needed today and it was the first time I enjoyed my own pasta with sea food. I always eat it in restaurants but never got the taste right by myself. Thank you Prestonn. kiss

I only had frozen chopped parsley here and I added a little habanero pepper and used more wine. grin I didn't have scampis but I had prawns.
This is so Beautiful and Yummy my Queen kiss kiss

Looking at the outcome, I can tell your pasta was not over cook.

How was the aroma in your kitchen? Like you are in those sea food restaurants right? cheesy cheesy

European elders are happy with you.

Just here smiling at your post.. Thanks for the mention.

Thank you boss.

I await the plating process photos tomorrow
You're welcome my Brother.

For the now just work with that amount of wine and get familiar with the taste, with time you can increase it.

Be ready to get a different aroma in your kitchen like the European kitchens. cheesy

Sure, gonna upload the process tomorrow.

Boss I need further clarifications on this recipe ;

1. What measure of the white wine should be added? I know you said a cup, but I also know there are cups and there are cups. I mean is a full glass like we do it over here in Naija or little drops of wine in the glass like obodo oyinbo people take their wine?

2. I noticed u mentioned putting non chopped parsley into the saucepan and cooking for 2 minutes before taking it out. U didn't mention what should be done with it after it has been taken out. I was thinking it was returned into the mix like the cooked scampi was done.

3. How did u achieve that dishing style when u served it?
1...If you are cooking the full spaghetti pack, make use of the first blue cup...Rif - First Photo

2... Don't return the non chopped parsley to the sauce.. it has serve is purpose already, dispose it.
The parsley below is ok for half pack of spaghetti, double if cooking the full pack Don't cut the stick. Rif-Second photo.

For the plating I'll upload the process with photo tomorrow.

You should cut your Tomatoes big not small.

Boss, this one seems more healthy than anything salt Bae can ever sprinkle in our faces grin. This one enter abeg!

I plan on giving this a try soon ( within the next two weeks).. However from the ingredients I think I will be facing the following issues :

1. I don't know what parsley is I.e I don't know it's local name and don't know if it can be sourced locally at shoprite or any other big retail store. If it can't be sourced what are the alternatives I can use in its place?

2. What are pepper flakes locally? I've seen some food vloggers use it on YouTube but almost all of them are abroad so I don't know if it's available locally here in Naija. Maybe a description of what constitutes it can help me arrange an alternative to work with while trying it out.

As for the scampi, I will use fresh shrimp in its place.
Thanks Brother... That dude can sprinkle salt on anything cheesy

Parsley is the english name, I do get mine sometimes in shoprite and also vegetable shops in major market.(mostly those people that sell fried rice ingredients)

Don't let the name Pepper Flakes confuse you, same thing as Crushed red chili pepper.. is called pepper flakes because of the texture and look.

You can use fresh shrimp.

First Photo..... Parsley

Second photo... pepper flakes also know as Crushed pepper

Photography on point !! See, it looks good when main focus is on the plate cheesy
Thanks.

Food photography is not all about focusing on the final stage which is the plating.

One can also use a picture to tell a story.. let people know what really happen before getting to that final stage..

I can't dish my meal and take it to another clean table and upload, pretending my table wasn't messy.

Only when you're into food styling or plating your main focus should be on the plate.. But for me, I did the cooking and also styled the food.. So not only the plate should show, my ingredients and other stuff for cooking should be among.

We all have different way of presenting food cooked in our kitchen to viewers.. Focusing on the plate only is not my thing.

I hope you understand.. Once again Thanks for the complement.

One of my best spaghetti recipe... The taste is out of this world.. Less time and small ingredients needed.

INGREDIENTS
●Extra virgin olive oil
●Garlic
●parsley
●Tomatoes
●Scampi
●White wine
●pepper Flakes

1.....In a saucepan heat up some olive oil...Add your chopped garlic.. immediately you start getting the fragrant, put in your chopped tomatoes.

2.....Put in some parsley without chop, Cook for one minute.

3.....Add your scampi or shrimp.Cook until pink after 2 minute take out the parsley from the pan.

4.....Add a cup of white wine and season with pepper flakes cook for one minute.

5.....Take out the scampi and add your cook spaghetti and toss to coat, adding reserved pasta water like half cup and continue tossing until the water become creamy. At this stage the spaghetti cooking process continues. Then taste for salt.

6.....Return your scampi back to the pot, add some chopped parsley and little extra virgin olive oil.. Your pasta is ready.

NOTE

1...... Always drain your pasta three minutes before the recommended cook time

3......Not all recipe you add Curry, Thyme, Crayfish, seasoning cub like Maggi.. some of this things take away the natural flavour from the meal.

2....... Always reserve some water from your cook spaghetti, because you will need it later... The spaghetti water make the meal sweeter

3......After adding your pasta water, taste for salt before adding extra salt to your sauce, because the pasta water is already salty.

☆ Ignore the many parsley on the second photo... someone was trying to imitate Nusret Gokce (Salt Bea) cheesy grin

The competition ended weeks ago. It was actually Golden Penny Food Photography contest. I wanted to create and shot a unique photo with their garri (packed Golden Penny garri) but I couldn't find it anywhere. Also, I was too broke to afford most of the ingredients I needed to make and take a photo.

Thanks boss! I appreciate

.. meanwhile you've been killing me slowly with your Food Art. I get inspired and demotivated sometimes by your photos. I wish to get to your food photography level one day. You're good Chef!
Thanks Brother for the complement..

You are already on that level.. just choose a style of food photography and work towards it, though you can also go out of the box.

look back at your first post, you will notice the improvement..Just keep on practicing.

For the competition, there will be nest time

My noodle, homemade boli (I used the oven) and roasted abi na grilled sharwa fish.

Happy Sunday

*Modified

I see some people use sardine in making noodles. Why not buy sharwa fish. It is very sweet, the only issue na the bones. A full sharwa fish ranges from 80 - 150 depending on the size. Sardine ranges from 200 - 350.

...the choice is yours
I think you need to go for that indomie competition..

You have all it takes to win, and your picture quality looks cool also..

All you need to do is to upload like three pictures here or more, then we gonna choose which one to use.

Respect my Brother

No it wasn't. The cucumber I used is the sweet type usually shorter than the common long dark greened cucumber. So the taste was salad like smiley
