Pap is more nutritious, as an undergraduate, I worked on pap (the one made from sorghum) for my final year project and I can tell you that pap contains essential prebiotics that helps in probiotics grow in the body, also, during the fermentation of sorghum, probiotics such as lactobacillus plantarum, Bifidobacterium and lactobacillus acidophilus and other probiotics have been found to be responsible for the spontaneous fermentation. These organisms produce lactic acid that gives the pap the sour taste, the lactic acid is very good in maintaining the stomach's acid acid level thereby preventing harmful organisms from attaching. Also, if sure of proper hygiene during the production, drinking the sour water helps to directly ingest the live probiotics and trust me, their influence in the body cannot be over emphasized
