Ingredients
1.2kg (2.6 lbs) goat meat (cut with the skin)
2 habanero peppers (or to your taste)
1 medium onion
3 big stock cubes
1 teaspoon thyme
Salt (to taste)
1 cooking spoon vegetable oil
Black pepper (optional)
Garnish
1 medium onion
1 small green bell pepper
1 small red bell pepper

Before you make Asun

Cut the meat of the goat into large pieces. Make sure the pieces are cut with the skin of the goat. If there’s no hair, it’s not going to be Asun’s real deal.
Wash and put the goat meat chunks in a bowl.
Add the thyme and black pepper; crush and add the stock cubes. Feel free to add other spices and ingredients that you use to marinate meat.
Mix the spices and the goat meat by gently rubbing with your hands.
Cover the bowl with a thin film. Put in the fridge and leave to marinate for about 1 hour.
In my view, it is completely optional to marinate beef and other forms of meat so you can bypass the marinating process and go straight to the goat meat cooking.
Pound or blitz the habanero (scotch bonnet) peppers and set aside.
Cut 1 onion into 4 large pieces.

Notes about the ingredients
Using baby carrots, to make a carrot cake, they’re the best. Carrots of fibroud are tasteless and difficult to grind and mix.
Brown sugar adds its unique taste to the carrot cake recipe but if you do not have brown sugar, use granulated sugar.
If you do not have cinnamon, you can skip it but make sure that you use brown sugar else this carrot cake will not be tasty.

Spring rolls are filled with vegetables (spring) all wrapped in a roll, hence the name, spring roll. However, because we love beef and other animal proteins (I mean, we all know that a Nigerian’s meal isn’t complete without meat, lol), our very own Nigerian style spring roll filling combines beef with the veggies which make it totally delicious.

Ingredients
For the crust

1. Minced chicken breast or beef

2. Cabbage, sliced

3. 3 medium sized carrots, grated

4. 1 onion, minced or sliced

5. 1 finely cut green bell pepper

6. Seasoning cubes

7. Curry powder

8. Salt to taste

9. Black pepper or red chilli powder

10. Chicken stock

11. Vegetable Oil

For the seal

1. 1 tablespoon all purpose flour

2. 2 tablespoons cold water

For the wrapper

1. 1 cups All purpose flour

2. 2 tablespoon corn starch

3. ½ teaspoon salt



4. 1 cup cold water

Ji Mmiri Oku is a yam pepper soup specially prepared for new mothers. Making clean the womb and making it contract during pregnancy was believed.

Ingredients
1kg (2.2 lbs) yam (white puna yam)
2 Cameroon peppers
3 cuts dry Mangala fish
1 tablespoon dry cayenne pepper
1 tablespoon uziza seeds (false cubeb)
5 uziza leaves (false cubeb)
5 utazi leaves (gongronema latifolium)
15 pods uda (grains of selim)
½ teaspoon ogiri Igbo (castor seed paste)
Salt (to taste)

Before you cook Ji Mmiri Oku
Blend the cameroon peppers, uda, uziza and dry cayenne pepper with a dry mill.
Soak the fish in cool water till soft, clean and debone.
Rinse and slice the uziza leaves and utazi leaves. Keep separatelly.
Peel and cut the yam tuber into half circle and wash with cool water.

Ingredients

Notes on the ingredients
The tomato puree gives the Moi Moi its conventional peachy colour. If you’re in Nigeria, the quality ingredient to apply is tatashe pepper. I do no longer just like the flavor of crimson bell peppers in my Moi Moi therefore I do not recommend it but you may try it and spot if you like it.

1 small stock dice
¼ teaspoon salt
1 teaspoon dry cayenne pepper seeds

10 pieces wafer-skinny red meat
1 tablespoon suya spice (suya pepper)
three cloves of garlic
1 teaspoon cloves (Kanafuru)
A small piece of ginger

Notes
The beef you will use for Kilishi must be cut from the reddest part of the beef and not using a fat in any respect.
Cut the beef as skinny as possible. It is generally as thin as 3mm. The Mai Kilishi have the sharpest knife inside the international. Their capacity to reduce a huge blanket of beef so thinly is a ability that can not be rivalled.
