Egusi soup is one those Nigerian soups made with egusi seeds, it is very easy and simple to make egusi soup unlike other Nigerian vegetable soups which involve long procedures. The two methods of preparing egusi include the frying method and the caking method. To make this soup within an hour, all you need to do is to add a little water to ground egusi, then mould into medium balls, the balls will form lump in the soup. This process doesn’t take much time. Other thing you may need to do is to season and cook your meat and chop your vegetables and keep aside.

Ingredients for preparing egusi soup

1. 400g ground Egusi (Melon seeds)
2. ½ kg of goat meat cut into medium sizes
3. 1 medium size Shaki (cow tripe)
4. 1 medium size smoked or iced fish
5. 1 head stockfish
6. 3 cooking spoons palm oil
7. 2 tablespoons ground crayfish
8. 4 piece scotch bonnet peppers
9. A handful of any Vegetable: bitter leaf Ugwu (Nigerian pumpkin leaves), waterleaf or spinach
10. 3 seasoning cubes
11. 1 small ogiri okpei, optional
12. Salt (to taste)

It is very simple to prepare beans and different vegetables can be added to cook beans and such vegetable include carrots, green beans, peas, tomatoes, parsley, celery, bell peppers, oregano, thyme, basil spring onions and kale. All these can be added to cook bean soup or beans porridge just the same ways you would have added these to cook jollof rice and vegetable rice. Also, instead of having to soak your dried beansfor hours before cooking them, you can decide to use canned beans for this recipe.
beans are best served with plantain chips, custard, rice or with soaked garri. you can still enjoy beans as main dish depending on how you wan it.
Fried beans is another best way to cook your beans, especially if you are so used to common ways you've known already, however, you can garnish your beans meal with few vegetables like tomatoes, carrots, onions,celery and some healhty spices like curry and thyme.

Ingredients for preparing fried bean with vegetables

1. 2 ½ cups of dried white beans for 5 servings

Nigerian nkwobi is a popular Igbo traditional food mostly served as a side dish or desert and usually together with wine or soft drink. This delicious meal is usually prepared with cow foot andit is loved by many people. Nkwobi is mostly sold as evening food in few restaurants and in some local bars; hence, it is commonly enjoyed with beer or wine or eaten as a main meal. you can also make this at home if you want, but need this main ingredients for preparing this, these include cow foot or cow leg, ugba (ukpaka (oil bean), ehuru seeds (calabash nutmegs), edible potash (kauwu), utazi leaves.
Here are some Tips you need to know before preparing nkwobi-

• Cow foot comes with a thick bone, you can tell the butcher to help you remove the thick bone and scrape out excess hair and dirt from the meat, then cut into medium sizes before taking it home.
• Cow foot is tougher than the usual meat you are used to, a pressure cooker can help you cook the meat in no time, to save time and your gas, but you can use charcoal fire to prepare this if you don’t have a pressure cooker.
• Edible potash, which is also called Kaun/kanwu, is a very special ingredient in nkwobi sauce, it is what helps to curdle and change the colour of palm oil and it helps to thicken the palm oil for a perfect coating of the meat.
• Ehuru seed or calabash nutmeg is an important spice in nkwobi recipe; it adds some kind of earthen flavour to the dish. This should not be replaced with the normal nutmeg. The outer covering is tough and the easy way to peel them is by roasting them in a dry pan or in open flame for 3 minutes before cracking them with your teeth.
• You will also need some greenish vegetables like utazi leaf to garnish your nkwobi. Utazi leaf has a very bitter taste, but you need to used it sparingly, you just need a little of it to complement the taste of your meal. If you can’t tolerate its bitter taste, you can substitute it with Uziza leaf, but it’s not bad if you use it.
• Your Nkwobi is delicious with or without Ugba, Ugba which is known as oil beans, contributes to the awesome flavour of nkwobi dish.
• Onions is also needed for garnishing of cooked nkwobi; it is usually sliced into rings and eaten raw.
• If you add too much edible potash liquid to the sauce, it could prevent the bitter taste of the kwobi; use just a little portion of it to
complement the taste.

Banana porridge is a delicious and savoury meal made with unripe bananas; it is usually grated into smooth consistency and cooked in meat broth or fish broth. This food is a native staple to southern Nigeria, (Akwa Ibom and Calabar), and It is called ekpang- nkukwo mboro in thier dialect.
Leafy vegetable is needed for the preparation of Banana porridge, the most recommended leaf for this is fresh basil (scent leaf) or Ashanti pepper leaf (uziza leaf). In this video, I decided to make use of two different leaves which were basil and spring onions, and the outcome of this porridge was really delicious and savoury.

• 10-15 unripe(green) bananas (1 bunch)

Edikaikong soup as the name implies is a popular Nigerian vegetable based soup loved accepted by many people; it is usually prepared with assorted meat, fish, fresh vegetables and lots of condiments. Two important leaves used for preparing this soup include water leaf and fluted pumpkin (ugwu) and it is best served with fufu, semolin, eba or with any staple food. To achieve this fresh and green looking edikaikong soup, you will have to add the leaf as the last ingredient and you don't need to leave the soup on heat for so long, at most 2-3 minutes will do.
