denzel2009:ingredients 1. 3 cups of bean 2. Red hot peppers (Rodo and Tatase) 3. 1 large Onion 4. Fish / Corned beef 5. Egg 6. Shrimps (Dried or boiled) 7. Edible oil (Palm, groundnut or vegetable oil) 8. Seasoning cube 9 Salt 10. Leaves for wrapping/tin cups/small plastic plates how to prepare Boil fish and eggs, then slice the eggs and break the fish into small bits then set aside. Peel the fine outer covering of the bean pods; soak beans in water for about a minute or 2 to enable the easy peeling. The peeled beans are then blended together with the peppers and onion in a food processor until a smooth paste is achieved. The edible oil which is then poured into the bowl containing the blended beans should be warmed but should not be hot. Seasoning and salt to taste is also added, the entire mixture is then stirred in thoroughly. Using a ladle pour into container of choice (Note: Leaves are to be shaped into a cone in one's hand to achieve the traditional pyramid shape) then put in the shrimps and eggs and boiled fish or corned beef. A pot which is about a tenth filled with water is placed on the fire and the containers with the mixture are arranged in the pot which should be properly covered as moin moin is dependent on steam to cook well. A steam pot should be used where available. |

Akara ![]() how to prepare Soak some beans in a large container (some people recommend lightly grounding the beans first to make it easier to remove the skin) for about an hour or so. Rub the beans between your hands to peel the skin off. (The skin should float to the top of the container.) Keep doing this until you have most of the skin off the beans. Grind the beans into a smooth, thick, finely-ground paste. Add salt, pepper, and if you desire, also add meat (but the meat should already be cooked if you do so). Put vegetable oil into a pot, until it is at least 2 inches (or about 5 centimeters) high (too little will result in flatter balls), and place on low heat. Test to make sure the oil is hot enough by putting a 'drop' of batter into the oil, and making sure the oil is frying the 'drop'. Using a spoon, pour 'balls' of the mixture into the frying oil. Fry until it is dark brown (or lighter if you prefer). Turn over and make sure both sides are fried. You can place it directly into a napkin to soak up excess oil. Usually eaten as a snack, or at breakfast with aka-mu or custard |
