You don't use yeast/enzyme/catalyst for yoghurt production. It is called starter culture. Made up of Lactobacillus bulgaricus & Streptococcus thermophilus. I suggest you try NABDA head quarters for improve strains as some of the commercially available ones are weak. I'll get you the address before tomorrow runs out
