Coconut milk is extracted by grating mature coconuts and squeezing them using cloth or both bare hands.this milky white liquid is called SANTAM in malaysia,BRUNEI in indonisia and GATA in philippines.it is used in the preparation of sauces,delicious curries and deserts.apart from
making food tasty and
creamier,coconut milk is
also a healthy addition to
other food supplements.
In thailand,pregnant women are adviced to drink young coconut juice to make their baby's skin soft and beautiful.
When buying coconut,you should be able to hear the liquid inside when it is shaked and it should feel heavy for its size.check for the three eyes,at the smaller end of the coconut.they should look intact and there should not be any cracks or damage to the shell.



INGREDIENTS:
1.1 Big coconut.
2.Half bunch of pineapple.
3.Sugar.
4.150cl of water.
5.preservative.

PREPARATION:
1.Shell the coconut.wash and cut into pieces.
2.Place them in a blender with About 50cl of warm water.Remember,the more water is added,the thinner the milk will be.
3.Wash the pineapple,peel and cut into small pieces.then blend with 50cl of water.
4.Pour the coconut and pineapple paste into a bowland mix with a spoon.
5.Heat 50cl of water and sugar if you want extra sweetness.Boil untill the sugar dissolves completely.mix the sweetened water with the coconut and pineapple paste and boil for 7mins and allow cooling.
6.place a few layers of cheese cloth over another bowl.pour the milk and squeeze the cloth to get all the milk out.
7.Add a little potassium metabisulphate to act as a preservative and serve.
8.If using the preservative,let the coconut shake juice sit in the refridgerator for one week before drinking it.if not,drink within few days,so it doesnt have sour taste.
9.best served chilled.
