Your pancrease is an organ in the body which produces insulin. Insulin is the hormone which regulates blood sugar. Diabetes results when ur pancrease makes little insulin, insufficient enough to regulate blood sugar. Some risk factors include (a) genetics ex one of ur parents has it or it runs in the family. (b) Obesity, the bigger u are the more insulin your pancrease needs to make in order to regulate your blood sugar. (c) Diet, eating lots of carbohydrates especially simple carbs like white rice, white bread, spaghetti, sodas and sugary drinks

If you change your diet can your blood sugar level go back to normal without the use of insulin?

This is absolutely right. However, with regards to obesity; your fat cells do not have receptors for insulin. You may be producing enough insulin but you have a condition called insulin insensitivity.
Doctors check for the level of insulin in the blood to differentiate between type1 and type2 diabetes. In type1, there is low insulin in the blood because the body is not producing enough and in type2 it is either normal or high at the early stages of the diseases. That is why people with type1 take insulin for treatment and those with type2 take other medicines and only much later in the diseases process do they take insulin.
