I use an Arsenal side with no player above 85 in rating and I use them to beat Real Madrid, Barca and Bayern Munchen with alot of 85+ players rating.The only way you can learn how to play better is use lower teams against big teams. You will learn how to defend their top class attack and be creative to score their top class defence. Those rating are even average. I prefer a chamberlain who has pace of about 90 but average of 81 to some players with average of 85 but less than 80 pace.
