HOW TO PREPARE OFE NSALA ( WHITE SOUP)
Ofe Nsala is also known as white soup and it is very popular in the eastern part of Nigeria. The igbo and some parts of south south are very familiar with white soup. The soup is tasty and fast and easy to prepare. And now that the rainy season is here, the soup is very ideal for a rainy and cold day because it is usually spicy and hot. Uziza, which is the most common leaves for Nsala, is very medicinal as well. And since it is also easy to make, you can count on it to save the day when you run out of soup and you need to make an 'emergency' soup. Remember, Nsala is not a soup that you make and leave or keep in the freezer for days.


INGREDIENTS
Uziza ( a bunch)
Utazi ( a handful)
Meat of choice ( chicken, beef, turkey)
Crayfish (blended)
Fresh pepper
Dried fish
Head of stock fish
Pounded yam, cocoyam ( thickener)
Seasoning cubes
Salt
Snails (optional)
Bush meat ( Anu nchi)







PREPARATIONS
Boil the meat with seasoning cubes,onions,salt and water, then cook for about 15 minutes.
Wash and add the dried fish/stock fish, then add water as you want in the soup, then cook for 10 minutes before adding the pounding yam or cocoyam.
Allow the pounding yam to dissolve for about 10 minutes before adding the snail, crayfish,uziza and utiza leaves and salt to taste.
Cook for another five minutes, then your delicious nsala soup is ready.
Serve with eba, semo, wheat, pounded yam, fufu etc.
