I believe they would have noticed him struggling to escape at some point, and they would have made a conscious decision to continue.

The suffocation would have already started whilst he was still in the coffin. And no conscious person would suffocate and not look for a way to gasp for breathe. It is technically a homicide, but the pastor had it coming.
