Op, the only thing expiring is the air-tightness ability of the plastic container...over time, the bottle loses it gripness with its cover and this will surely give room for impurities to disqualify the contents of the bottle. Expiry comes to play when the content (water) can no longer sustain its ability to remain safely drinkable. So, I think the only thing that expires is the content of the bottle at the end of day because thats what will be consumed afterall.

A sachet water is no longer considered good when it is left in the clutches of a hot temperature which induces breakdown of the synthetic chemicals used in producing the sachet which eventually goes into the water it holds.

Food products must have expiry dates on the packaging as this is a standard requirement.

The expiry date on the water bottle indicates that the water "might" start changing taste due to the chemicals on the packaging bottle. One doesn't necessarily has to notice the difference in taste but knowing that the chemicals from the packaging are active is enough.

Water bottle chemicals are less hazardous if not insignificant compared to wine bottles and tinned stuff, hence they can be used again and again.
