There’s tons of good online recipes on Google and there’s a lot to say for jollof rice but it’s basically rice cooked in a spicy tomato and pepper mix and meat/chicken stock (sometimes). You need to blend tomatoes with pepper and fry to eliminate the sour tomato taste. Then add your rice, liquid (water or stock), spices (Maggi/curry/ginger/whichever) and cook till it’s done. Some people recommend parboiling the rice for a few minutes before the main cooking to get rid of the extra starch but you get the exact same result by washing till the water runs clear and parboiling can cause soggy jollof rice if you don’t know what you’re doing.
