How To Prepare Nigerian Eba by Spazwik: 12:50pm On Aug 18, 2017
Funny though but the little things we overlook might be an issue to someone else grin, So I want to play with this

Utensils Needed

Pot
Baton
Bowl
Ingredients Needed

Garri
Water
Method

1. Boil water in a pot to a temperature of about 90 degree celsius

2. Pour this water into a bowl and spread garri evenly to the water

3. Cover the bowl for about 3 minutes to allow the garri to soften and swell

4. Turn the content of the bowl with a baton to mix properly. Add more hot water if its too hard; adding more hot water will make it softer, so add according to your taste. You can also add more garri if the "Eba" is too soft to make it harder

5. Serve the "Eba" with any soup of your choice

To soak garri for drinking, do the following;
1. Add garri to a cup/bowl.
2. Pour in water.
3. Stir to cause the dirty to float to the water surface.
4. Drain off and leave for a few seconds for the garri particles to "expand".
5. Add chilled water and other ingredients like sugar, milk, and groundnut.
6. Stir and eat up. By the time you add water the 2nd time, your garri would have expanded in volume!

The poster is right. When you're done sprinkling garri into hot water, you need to cover it for a few minutes to harden a bit or cook.

That's how I was taught and I've been doing since forever.

Another thing is, to prepare Eba, you either use white garri or yellow garri. I use yellow garri because of its non-acidic content which is abundant in white garri.

Yellow garri gives starchy eba unlike white garri. To prevent that starchy texture, I add just a little bit of room temperature water to the hot water before pouring garri into the water.
