Nigerian bitter leaf soup is a very common vegetable soup made with a thickener (cocoyam); this delicious yummy soup is usually prepared with goat meat, stockfish, dried fish and a traditional spice called Ogidi. Cocoyam is a special ingredient in bitter leaf soup, it serves as a very good thickener for this soup and not just that, but adds volume and earthy aroma to the soup; however, other thickeners such as Achi, Ofor, Ukpor and Egusi can be used to thicken this bitter leaf soup.
