Nothing is better than grilled eggplant- add a little mozzarella and it’s irresistible!

Peel and slice one large eggplant into 1/3 inch discs. Coat with olive oil and season with salt and pepper. Place on hot grill and grill until caramelized on both sides.

Take eggplant off the grill and top with a slice of mozzarella, diced tomatoes and chopped fresh basil.

Dress with a drizzle of balsamic vinegar and olive oil- serve.

You can also make this ahead. It is a great side dish or appetizer.

(Note- sun-dried tomatoes can replace ripe tomatoes…yum!)
