Eggs are a great source of protein, vitamins, and minerals. You can get more or less nutritional value depending on whether you consume the entire egg or only the whites.

One of the best sources of protein is eggs, which are regarded superior than cow's milk and meat. While the high protein content of egg whites is well-known, the yolk actually has more protein per gramme. Egg whites contain 10.8g per 100g, whereas egg yolks have 16.4g per 100g, making them a close second. However, because each egg has more white than yolk, the white is the star of the protein show.

While whole eggs are relatively pH neutral, egg white is one of the few food products that is naturally alkaline, with an initial pH value that can be as low as 7.6 at time of lay, but with increasing alkalinity as the egg ages, and can reach pH of 9.2.
