Pls babyosisi i want to roast my xmas chicken, my first time though. I need tips on how to get a crispy one with spices available in naija.

Make sure you gut out the chicken i.e. Make a cut and take out all the contents inside liver,intestines etc if you killed the chicken yourself
I suggest you get a mixture of maggi,salt,pepper and curry,mix into a paste and rub it all over the chicken including inside
Then leave it inside the fridge overnight for all that spice to soak in

Next day,heat your oven to 350 degrees
Place chicken in a roasting pan, and add half a cup of water to pan and cover pan with foil
if not available wrap chicken completely in foil and place on a flat roasting pan in the oven ,add some water inside that foil

Chicken should be covered with foil to retain moisture or else it dries out

Depending on size ,roast for 90 mins to 120 mins covered with foil then uncover and let the outside brown a little for about 15 minutes.
It will surely come out delicious.

Lol my grandma is late, she died 4 years ago. I've got no surviving grandparents, except aunts & uncles old enough to be my grandparents. I've got a lot of things going on here so I can't visit naija this year besides the whole election brouhaha scares me, I hear there's a storm brewing.
