The quantity of palm oil it takes to give it that face lift is worrying. It's a cholesterol booster, serious one.

Ok here goes....

♡Ingredients
●Mince meat or you can use finely chopped meat seasoned as you normally would. (About 750g at the least makes enough for Alphahubby and I to have for dinner with some leftover to take as lunch to work the next day. )
●Onions - chopped to your liking
●Mixed veg or basically any combination of veg you have is fine eg carrots, peas, sweet corn, bell peppers etc etc chopped to whatever size you like some like it chunky some like it fine.
●Potaoes ~about 6 or so medium potatoes ( irish ideally, but you can also use sweet potato or even a mix of irish potato and parsnips)
●Cheese - any type you like will do - i usually do a cheddar- mozzarella mix.
● meat stock
● about a table spoon cornstarch ( optional)
● about a glass of red wine ( optional)
● chopped garlic and ginger ( optional)
● bay leaf ( optional)
●butter
● Some milk or cream ( optional)
● about a tablespoon of tin tomatoes ( Optional)

♡Equipment
A deep baking dish preferably ceramic but foil is also good.
Potato masher

♡ Process:
Peel your potatoes and cut them to about the same size and boil in salted water.

Meanwhile fry your onions, garlic, ginger, bay leaf in a pot for a bit. Add the tin tomatoes and the mixed veg and fry for a minute or 2.

Add your meat and fry to brown it. After a a few minutes take a sip of red wine..... oops sorry... i meant add about half the glass of red wine if using. You can add the whole glass if you like depending on how much you are making.

Let it cook for a bit and then add some meat stock just a bit not to make the meat sauce watery but enough to make it juicy!.... season and add some pepper as as you like let simmer till meat is thoroughly cooked through.

Mix the cornstarch with about 2 tablespoons of water then pop into meat sauce to thicken slightly.
And the meat sauce is ready!

Take potato out of boiling water and mash till smooth. Add about a knob or 3 of butter. Add milk or cream if using ... just a dash of not too much. The potato mash should hold well on a spoon.

Turn your oven on.

Get your oven dish and fill till at least half way with meat sauce.
Spoon potato mash on top and spread to cover it uniformly.

You can use a fork to rake the top for some texture or if you want to go all gourmet you can use a pipping bag with an icing star nozzle . And pipe the mash on top. wink

Just eyeball the level of potato to make sure it is not too thick...You must never have a potato layer deeper than the meat in my carnivorous opinion..... 3/4:1/4 meat to potato mash depth ratio is ideal for me.

Sprinkly with the cheese..... either lightly or heavily depending on how you like it. Additionally, you can add about 4 or 5 small knobs of butter on top at different places ( this is optional)

At this stage, you can put in the oven or let it cool, cover with foil or clingfilm and freeze for a later date

When ready to cook, Pop into a hot oven ( about 120 -180°C) and bake for about 25 - 35 mins or until cheese is melted and is lightly golden. If using a frozen one, allow to defrost fully and remove cover before popping in oven.

For the roast veg side dish, just slice any veg you like into uniform pieces., drizzle with oil enough to coat all the veg lightly, add a sprinkling of salt and some black pepper . Pop into oven for about 30 - 40 mins.

I used mixed yellow, orange and red bell peppers, courgette, onions and carrots.

While its cooking in the oven, finish the remaining half glass of wine while catching up with your NL gist!

Alternatively you can serve with a side of salad!

Hope its straightforward never really written a recipe before. grin

Please come back and testify with pictures!!! grin
