Read back a bit for some inspiration but you can try rice with mixed vegetables or rice and curry sauce. Coconut rice too is usually a it when well made.

You can swap rice totally for potatoes- mashed, roasted or just fried as chips! With sausages,fish or chicken preferably roasted

some suggestions
Rice: jollof, fried, coconut, white (basmati, thai jasmine,) chinese style stir fry, Ofada
rice can be substituted with pasta, couscous or rice noodles.

sauces: basic stew, mixed veg sauce, chinese stir fry, ofada stew/ ayamase

Chicken: can be substituted with duck or guninea fowl,
rather than boiled and fried, why not try:
roast whole or spatchcocked (ie, cut out only the back bone and spread it out flat- cooks much quicker)
bbq it over open flame / coals
casserole (will work very well for duck and guiniea fowl as these are "game" birds and the it cooks differently to chicken, and can take longer especially if you want it tender)

substitute chicken for slow roast ram or pork, for the ram, you can use a whole leg of the ram (thigh) if you have a big enough oven
you can also substitute with grilled whole fish or large prawns on skewers

Basically stir fried vegetables, with some chinese style sauces - you can get them in jars or bottles. Oyster sauce and soy sauce is common in nigeria, hoisin and szechuan sauces are also commong ones. For the rice its basically chinese style fried rice.

Frittata takes me not more than 4-5 mins to make. I use just onions sometimes, other times I use zucchini.

Whisk and salt your eggs (cheese is optional), heat a little amount of oil, add sliced onion or shredded or sliced zucchini, watch for softness and then add the sauté zucchini or onions to your whisked eggs, whisk again and pour in the pan containing oil. Tilt the pan to make sure the eggs settle evenly, cook for a minute or 2 until the eggs are baked. Voilà! I don't bake in the oven.
