Unripe Plantain with melon (Anyu) sauce.
Twas yummy!
Though I am not a big fan of unripe plantain, I prefere it a little ripe and not too ripe. But this one was really good.

You mean no pepper??
In Yoruba jollof, the main ingredient is pepper... that's what gives it the red color
So, saucy = peppery grin

Ingredients
3 bananas
1 tablespoons of powder Milk
1 teaspoon of baking powder
1 teaspoon of sugar or 1 tablespoon of honey ( I prefer Honey)
1/2 cup all purpose flour or oats flour
A pinch of salt
I egg
1 tablespoons of butter or margarine
Water ( I prefer loose pancake mix that way it will come out light) so adjust water as you mix

Directions
Crush your banana with fork or spoon
Sift in flour, baking powder
Add in butter, egg, sugar or honey, milk and salt
Add water and mix well until no lumps and smooth batter
Heat your nonstick frying pan, add in 1 tablespoon of veg oil, and heat on medium heat
Scoop in your batter, and flip the other side untill cooked
Cook the remaining batter same way till you are done

2 1/2 cups flour
1 1/2 teaspoon baking powder or 1 teaspoon baking soda
1 tablespoon powder Milk
5 Tablespoons of sugar
1 small Egg (optional)
30g margarine (2 tablespoons)
A dash of Nutmeg(optional)
1 cup water

Directions
Sift flour and baking powder in a bowl
Add sugar, salt, nutmeg, milk and mix
Add in Margarine, mix
Pour in egg and half cup of water
Start mixing and be adding water little at a time , till you have a non sticky dough
Knead the dough inside the bowl until it's smooth, do not over knead.
Heat your oil and reduce to medium, use your hamd cut the dough in small size and drop in the Oil.
Make sure the oil is not too hot, if not the oustside will be cooked but inside uncooked. Fry both sides by turning at intervals.
