I roast my ehuru too. Learned that from my mum. It activates the scent more or maybe it is in my head sha.
To roast mine, I insert them in a fork and place for fire. I have one old fork for this. Sometimes I drop them on my burner, lmao!  Definitely ma'am..The aroma from roasted ehuru gets me high somehow(Lol) Reason i don't eat catfish pepper soup outside is cos most of em don't even roast the ehuru...All they concerned about is Pepper(Lol) |

Catfish peppersoup is one of the easiest meal to prepare....This is how we do it..Elvis presley style -
Ingredients: Cat Fish 4 Ehu or Ariwo or Calabash Nutmeg seeds Habanero Pepper or chilli pepper (to taste) A few scent leaves 2 medium onions Salt (to taste) 2 big stock cubes
Using an old frying pan, i roast the Ehu seeds (stirring constantly) till you can smell it. Don't worry you will know when it is OK to take it off because it has a distinctive aroma. Then i peel off the membrane from all the Ehu seeds and grind with a dry mill. Cut the onions into tiny pieces. Wash and pick the scent leaves and tear them up with your fingers into small pieces.
Cooking Directions:
I place the pieces of fish in a pot and pour water to just cover the fish, then i add the stock cubes and bring to the boil. Once it starts to boil,i add the ground ehu, onions, habanero pepper and scent leaves and continue cooking. Once the catfish is done, i add salt to taste and leave to simmer for about 5 minutes and it's ready! Catfish Pepper Soup should always be served hot. It can be eaten alone with a chilled drink. I love to eat it with Agidi, Boiled White Rice or Boiled Yam. |

Meanwhile, thanks for all the contributions here. @Elvispresley, Eulalia and all. I just cooked a fairly large rice. Maintained every other basic ingredient, reintroduced the butter and deleted parboiling. Came out really nice! I wonder what I missed in the butter before. Maybe brand or quantity?  You're welcome dear... I guess it's the brand concerning the butter ish... What typa food are you posting next please?.. And hope you haven't forgotten about the Jollof rice 'orgy'...Lol |

Mariangeles: I don't agree. Nigeria can produce quality if they wanted to. Blue band margarine is one of the best brands, if not the best, compared to most foreign brands which are mostly too salty. True that... We just so fvcked in this country...Almost every grocery we use is imported... Could you believe I've been looking for Laughing cow cheese for the past 3 weeks? pocohantas: I don’t get all the firewood talk. I never knew my aunty uses gas cooker till I went to help her for a job. I was shocked to see all the heavy duty gas cookers. With those very tall cylinders.
Recently I found out that Olaiya restaurant uses gas cookers. This is 2020. Sometimes I think it is a mental stuff. You know, you see something so much, you accept it is the only way and you are stuck on it. 
Please come and take me there o. I am FFO. For real... You know most of these women are old-time caterers and they have tried both the firewood and gas cooker options....So for them to stick to the gas cooker option means there's more to party jollof rice than Firewood.... Don't worry,i'll take you there someday come have yourself a Jollof orgy...Lol |
