Legalization typically take two days.
Yes, your documents can be collected by a third party. The person will have to go with an authorization letter written and signed (you can use e-signature) by you and an ID.

You can apply for either a national or Schengen visa. An important document is the letter of invitation from the spouse who is a citizen.

As for appointments, dates are released every last Monday of the month. This implies that appointments for November will be released next Monday.
In my opinion, agents have better chances of helping to secure a date.

Lastly, there are YouTube videos that you can watch to learn from the experiences of people on how they went about the process.
