I really don't know which race you want as the most advanced! according to the shows, humans really the most advanced, and from the build up from S01 up to S08 there's no hint that the NK is a skilled fighter, all that was known was that he could raise the dead and the dead fights for him.

There's nowhere in the show that it was stated that the NK was a good fighter, and the NK himself has witnessed Jon kill one of his commanders, and to say the least, the ice spear or sword get shattered when in contact with Valyrian steel, like in the case of Hardhome.
The NK knew of this already, reason why he raised the dead to fight on his behalf, so he can get a chance to complete his mission.

How did Arya know that the Night king would die from being stabbed right there? If she had stabbed him from the back, it would have at least be believable but honestly, that scene showed nothing but lazy writing that people have already posted on here. Just shows what some of us have known for a while that the standard of the show has fallen since season 4, season 7 being the worst of the lot and this season is closely following.
.... I don't blame the writers though, they can't tie the laces of GRRM, who has been unable to finish the book. Since it became those two, the writings has been sub standard but that's not what makes me mad, it's rather the people who defend such terrible writing even with insults. Completely ridiculous.
As per your first question You think it's easy to sneak past wights? the build up to killing the NK was what was shown in the library when Arya was silently moving between the shelves dead silent. and regarding the noise she made when she leaped, it was the feeling of courage and getting pumped up to kill the NK.
Your second question, go and re-watch that scene, how else do you expect the NK to hold onto Arya? one hand on the neck and the other held the hand with the knife, reason why she dropped the knife to the other hand and stabbed his chest.
And saying it's lazy writing stabbing the NK in the chest, remember bran knows how he was created, and there's a reason and purpose he gave Arya the dagger, and to actually kill someone quickly, aim for the heart, and an assassins intuition led her to stabbing the heart. or probably bran told her.
Don't find loopholes where there's none, there's a reason it's called a fantasy series.

It was actually Drogon that came to the rescue of Jon, the NK was about killing Rhaegar with his ice spear before Dany came to the rescue.

I personally think you should rewatch he episode and this time with a keen eye, he was at the frontlines, and when they were being overrun by the wights, they had to retreat back to the castle, before the trenches were lit, and soon after the wights took the castle, everyone fighting for their lives, seeing that there no winning for them, he lost hope and hid himself, till the good knight Ser Beric showed him Arya and he regained his courage.
Saying he's afraid of fire, even though he saw Arya and there's fire burning all around him, do you think he'll still go thru the fire to fight for her.
