CRUNCHY KOKORO
I have always known that kokoro is made with cornflour but recently my friend gave them some kokoro.

She allowed me to finish eating it, before she told me that she made it using Garri because according to her, I won't accept to taste it knowing that it's fried Garri.

But honestly, it tastes so good and also so Crunchy like the one made with cornflour.

This yam pepper soup is popularly eaten in Igbo land during the period of omugwo (the time when a young mother is pampered and taken care of after giving birth) this food is believed to help cleanse the uterus, pump sufficient breast milk and helps the uterine muscles to contrast back. This is achieved With the help of the following spices

Uda (Negro pepper) It serves as a natural contraceptive, helps in reducing the high rate of pregnancy among nursing mothers.


Uziza(African or black pepper) it enhances the uterine contraction for expulsion of placenta and other residues after birth. It helps the uterine muscles to contrast back.

Ajumbaise It is a very good herb from a town in Imo state,Nigeria. It helps a nursing mother to drop down the pregnancy weight, it also helps to cleanse the womb of any remaining postnatal remains.

Ingredients used
1 small tuber of yam
1medium size stock fish
4 dried catfish
Uziza (African or black pepper)
Uda(negros pepper)
Dry pepper
Crayfish
Salt to taste
Uziza leaf optional.
There’s no need for seasoning cubes especially during the first two weeks of delivery.

Steps
1) Grind the uda and Uziza to powder form.

2) Cut the yam to your desired size.

3) Wash the stock fish and the dried Catfish with Warm water and salt to clean off the dirt.

4) Wash the ajumbaise thoroughly with salt and cold water, don’t loosen it.

Directions
1) Put the ajumbaise inside a pot, add Water to cover it and cook for about 30 minutes till it brings out its colour.

Picky eaters are no doubt a concern for mothers. When you have children that eat all foods, you don't know how lucky you are. I have come to realize that the problem with picky eaters is not about food but their feelings towards food. Children whose palate are broad generally find food interesting.

My five year old son can spend hours to eat food while his younger brother will finish same within few minutes. This is very challenging for me because picky eaters can miss out on a lot of good food and also miss out on important nutrients found in foods that they don't eat like vegetables, salad, beans, fruits, nuts, grains, etc

Below are some of the tips to help your picky eater
Be Creative With Your Cooking
You don't have to rule out important food because they don't like it. Carrot is one of the things my son don't like to eat, but I found ways to incorporate it in his pap, Soups and juice. There are always other interesting ways to prepare the same food.

Be Patient When Introducing New Food
I understand the disappointment when you prepare a delicious food and expect it to be loved by your kids but your child put tiny bits in their mouths and take them out. You need not to be discouraged, introduce new food in bits along side with your favorite and serve in a beautiful manner.

Observe Your Child Properly
Learn your children properly and observe when they are hungry so you don't force food on them. Keep record of the last time they ate, if they have been an in between meals. Forcing them to eat when they are not hungry might ignite power struggle over food and hereby make every meal time frustrating for them. Serve them food in small portions and allow them to ask for more, even if they don't, encourage them to have more.

Please don't be tempted to compare them to other of their friends or siblings that eats well. Every child is uniquely different and I know that it could be quite challenging and tasking for you as a mom but know that it's a gradual process.

Bread Rolls a.k.a dinner rolls is a great meal enjoyed by all at all time. It is one of the staple food in Nigeria.

These Bread Rolls are so easy to whip together and you won’t be needing any electric mixer and no much kneading. These dinner rolls are so tasty and very soft, be sure to have the aroma everywhere in the neighborhood. Ever since I started making bread at home, my family doesn’t enjoy the store ones any longer especially my 5 years old son who usually insists on my bread because of this, I usually prepare this at least twice in a week.

Ingredients used

4 Cups flour + 1/4 cup extra for kneading
11/2 Tablespoon Yeast 3 Tablespoon powdered Milk 2 Eggs (1 for Egg wash) 1 Teaspoon Salt 11/4 Cup Warm water 4 Tablespoon Melted margarine 1/4 Cup Sugar + 1 Tablespoon for proofing the Yeast

Instructions

Dissolve the Yeast and little Sugar in warm water

Banana Pancakes are totally irresistible, fluffy and loved by all, its one of the useful way to enjoy your over ripe bananas.If you have been following my blog, you will know that I love bananas and if you also do, you will love this delicious Banana Bread Here.  

Ingredients for preparing Banana Pancakes
3 Ripe/overripe Bananas
2 1/2  cups Plain Flour                                                                                                                                                                           
2 raw Eggs
2 cups milk
1/4 cup Sugar
1 teaspoon of grated nutmeg                                                                                                                                                                 
1 teaspoon of Salt
1 teaspoon baking powder
2 to 3 tablespoonful margarine ( for greasing the pan )

Tip: you can substitute the milk in the recipe for water.
Preparation
1. Blend or mash the bananas  with fork or potato masher until smooth.
2. In a bowl of flour, add the sugar, nutmeg, baking powder, salt and mix together                                                             
3. Add the eggs and milk into the mashed bananas and mixed properly                                                                                 
4. Gradually pour in the dry ingredients into the wet ingredients and mix properly to avoid lumps.
5. Put a little margarine on a pan, enough to grease the pan and heat up until hot.
6. Using a deep spoon , scoop up some of the pancake batter and pour into the greased hot pan.
7.Cook the Pancake on low heat for a few seconds ,flip over and cook the other side.
8.Repeat this process for the remaining banana pancake batter and always grease the pan before use.
9.Serve and Enjoy as a snack, breakfast or with any drink of choice

Tip: A non-stick pan is highly recommended for this .

Family / How To Get Through With Your Kids During The Holiday by Gracevalue: 1:16am On Aug 18, 2018
Today is the 16th day into the school holiday and every parent knows how tasking it can be to engaged with the kids and maintain peace this period. Most parents are already screaming on social media asking when the school will be back to session.

Meanwhile, I don’t buy the idea of holiday/summer school. I believe in giving children the desired break outside the school curriculum activities. Engaging them in vocational skills is perfect but since I am yet to get any for my kids, these are some of the tips I implore to get them engaged and still maintain my sanity.

Let them give you ideas of what they want to engage in. Imposing a particular game for them without actually knowing what they want to do, don’t always go down well. You will be more at peace when there’re doing their own thing as long as they are safe.

Get involved with their activities. Even with your tight schedule or how difficult it may seem, try and create time and play games like hide and seek with them. They become less cranky and give you the desired space when most needed.

Create room for outdoor activities. Kids get bored easily and life outside their immediate environment makes them excited and makes them tired too, therefore having less energy to bother you.

Give them room to explore. Kids will always be kids, don’t expect to have a perfect house this period, allow them to have fun, their rooms will get scattered once in a while, don’t bother screaming down your neck. Let them explore in a safe place or under a close watch.

Engage them in some house chores. This is a good way to engage them, my 5 year old son takes close to 45minutes to lay his bed and funny enough he enjoys it because he boost about it to his friends. There’re a lot of chores you can engage the kids with and trust me, they will love them.

Invite their friends over and let them return the visit by so doing they share new ideas of games to try out. If it’s possible consider doing a family swap.

Don’t forget to buy new toys for them this period. You know how kids like new things and how they tend to engage to something new. This will help maintain your peace for a period of time this period.

Tom Brown is one of the essential meal I use when I wean, it’s healthy for babies(both adults) makes babies remain healthy and not lose weight while weaning. It’s typically brown powder that consist of
yellow corn, millet,guinea corn (grains), groundnut and soya beans (legumes).

Tom Brown is rich in fiber, it consists
of protein, iron, magnesium, potassium, carbohydrate, vitamin B6 and Vitamin B12 among others.

I used yellow corn, millet and Guinea corn. You can include groundnuts or any other nuts but due to allergy, I don’t use them.

Quantity of Ingredients Used

Yellow corn 1kg

Guinea corn 500g

Millet 500g

Procedure

Step 1. Pick out the stones, dirts or any other foreign objects from the grains



Step 2. Roast all the grains separately, don’t let them pop like popcorn.


Step 3. When cool, combine all the grains and grind them till smooth and finely powder form.



Step 4. To prepare, mix your desired quantity with little water, be careful not to add plenty water. Then add boiling water till it thickens. Transfer to the burner for 30 seconds or more to complete the cooking.


Serve with milk or formula

Zobo is a Nigerian beverage made from dried Roselle plant flowers. A good alternative to the common fizzle drinks because of its nutritional value. Having a sip of a chilled zobo drink in a sunny day is the best thing you can ever imagine, it’s so easy and simple to prepare.

Ingredients for Nigerian Zobo drink

3 handful of dry Zobo leaves

3 big piece of ginger

1 big sweet pineapple

11/2 tbps of cloves

Enough water Before you make the Zobo drink

Wash the dry Zobo leaves thoroughly in cold water. It will seem like all the flavours/colour of the zobo are being washed off but don’t worry, you will see that the dry zobo leaves still have a lot of the colour intact when you start boiling it.

Wash your pineapple thoroughly and cut into thin slices including the peel of the pineapple Wash and cut your oranges including the peel Wash and chop the ginger into tiny pieces.

DIRECTIONS FOR MAKING THE ZOBO DRINK

Put the washed zobo leaves into a big pot.

Add the pineapples, oranges, chopped ginger and cloves.

Pour enough water to cover the contents of the pot, stir and cook for 30 to 45 minutes.

Allow to cool and mash/squeeze the pineapples Sieve and serve chilled (optional you can add any sweetener of choice but I prefer mine natural that’s why I go for the sweet grade of pineapple)

To garnish: Feel free to add any sliced citrus fruits of your choice: orange, lemon, lime.

Banana bread is one of my favourite , if I have my way i would prepare it daily.

The banana season is here, you hardly pass any junction without the succulent ripe bananas calling out to you to come pick them up (smiles).

Banana bread is so easy to prepare, you don’t even need to knead like the regular bread recipe and there is no special equipment for preparing it. The taste is so yummy and note that the aroma won’t leave your kitchen soon.

My 4 years old son now insist on having banana bread for breakfast every morning, his love for bananas is out of this world.

List of the Ingredients Used

4 Ripe Bananas
2 Cups of Flour
1/2 Cup of Melted Margarine
1 tsp Baking Soda
1 tsp Baking Powder
1/4 cup white Sugar
1/4 Cup Brown Sugar (I used the light brown type)
4 Eggs
1/2 tsp Banana Essence
Pinch of Salt
Direction For Making The Banana Bread

In a plate, mash the bananas with fork and set aside. You don’t need to blend it because you don’t need the banana in a very smooth consistency.
In a bowl of flour, add the baking soda, baking powder, salt and combine together.
In another bowl, pour in the melted margarine, brown and white sugar and mix together. Once that is done, add the eggs and continue mixing to combine everything. Add the mashed bananas, Raisins and banana flavour and mix.
Pour in the dry ingredients into the wet ingredients and combine everything properly.
Grease the pan with melted margarine and dust some flour on it. This will prevent the bread from sticking with the pan when it is ready.
Pour in the banana bread mixture into the greased pan and sprinkle the remaining raisins on top.
Put in a preheated oven on 180°Celsius and bake for 45 minutes.
You will know that the banana bread is ready when you insert a skewer and it comes out clean. (At this junction your neighbour will be able knocking at the door�)
Let it cool for 5 minutes before slicing.
Enjoy with any beverage of choice .
