Anyone who seriously thinks Igbos don’t cook with a lot of pepper should take a bath in pepper soup laced with ground uziza seeds and freshly-harvested ose-Nsuk(k)a. Igbos own spice when it fits the universal vibe of a particular food (nkwobi, ishi-ewu ans pepper soup are supposed to sort of be piping hot). You won’t normally find that level of heat in rice that’s been made for other people. Individual people may turn the spice down or up depending on who they’re cooking for at home or wherever. But in a universal sense pepper-soup (which certainly isn’t something the typical non-Igbo/Deltan even eats like that) calls for … plenty of pepper, whereas normal stew doesn’t. Beyond that it’s just a matter of personal preference. Some people like their onugbu soup to have reasonable traces of bitterness so don’t wash the bitter-leaves as much, other people would rather it was honey-sweet so they wash and wash and wash. Some people like to form the base of their jollof rice with a mixture of bleached palm oil and goose/duck fat, others use turkey or groundnut oil, still-others use just standard vegetable oils. Some parboil. Some don’t. Some prefer akpu. Others prefer nni-ji (pounded yam). Some people particularly like pepper and base part of their food-culture around it, others just see it as a condiment used for technical necessity beyond foods what really, really call for plenty-pepper (ji mmiri-oku being another). People like what they like as individuals.

Igbos like pepper (especially being one of the ethnic groups with a rightful claim to pepper-soup, not to mention ose-Nsuka being indigenous to Igboland and used quite a lot in certain traditional dishes) and personal preference is an individual thing anyway. Just in moderation.

Majority of the yorubas cook with Cray fish, smoked fish and okporoko... but it's not really common in dia kitchen store or fridge... this are items they add to soup like 2 times a month... so generally dey don't dislike it...

Secondly yes I emphasized on only the pepper because a lot of people like myself get some tingling feeling of nausea and unsatisfaction when they eat foods devoid of pepper.

#sighs# l knew this tribalistic issue will come up that was why I stated this is a NON TRIBALISTIC ISSUE and without prejudice to any tribe.its just a question I asked because I discovered that it's a common pattern so I wanted to know if it's individual preferences or a cultural thing


N.b I know politicians have fanned the embers of tribal divisions and it's still playing out even after elections that any little thing is immediately misconstrued to mean tribal bias.anyway if you feel so, THAT IS NOT THE MOTIVE OF THIS THREAD.this has to do with food and everything pertaining to the distinctive similarities and differences in foods among the igbos,thank you sir.

Without prejudice to any tribe (that's not my intention) why do the igbos not like adding pepper to their stew,sauce,soups and meals.i had an experience yesterday.i went to buy somethings in the market and I was hungry and decided to stop by a buka within a plaza and I asked the waiter what they had she said it's only oha and egusi they have left.i said ok please give me egusi.she brought it and I noticed there was no pepper inside the egusi.this is not the first time I'm eating the Igbo version of egusi.they have their own unique ways of making egusi which is slightly different from the Yorubas and I always notice a similar pattern in their egusi and other soups NO PEPPER.i could still tolerate a soup without oil but pepper,arrghhh.anyway It was delicious but i didn't feel the satisfaction of eating which brings me to my question

1.is it that it's a culture thing that it's against your ways to cook food with pepper?

2.why so much emphasis on Cray fish,smoked fish etc without pepper and Oil

3.why is the eba always startchy.thank you
