Bacon, lettuce and tomato pasta salad

Ingredients :
corkscrew-shaped pasta or penne
1/2 cup milk
12 ounces lean bacon
3 medium ripe tomatoes, cut into chunks
1 tablespoon chopped fresh thyme
1 clove garlic, minced *
salt and ground pepper
1/2 cup mayonnaise
1/4 cup sour cream
4 tablespoons chopped chives or scallion greens
5 heads Bibb lettuce [quartered] or 5 cups chopped romaine hearts

Procedure

Cook the pasta in a large pot of salted boiling water. Drain and toss with the milk in a large bowl; set aside.

Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp. Drain on paper towels. Discard all but 3 tablespoons drippings from the pan.

Add the tomatoes, thyme and garlic to the pan and toss until warmed through; season with salt and pepper.

Crumble the bacon into bite-size pieces; set aside some quantity [1/4 cup] for garnish. Toss the remaining bacon and the tomato mixture with the pasta.

Mix the mayonnaise, sour cream and 3 tablespoons chives with the pasta until evenly combined. Season with salt and pepper.

Add the lettuce; toss again to coat.

Garnish with the reserved bacon and the remaining 1 tablespoon chives

It has a very nice smell and is used for cooking. It can be used to make pesto saue too.

METHOD,
BLEND CHILIES AND PEPPER AND TOMATOES INTO A FINE BLEND FRY CHOPPED ONIONE IN HOT OIL WITH SOME SPICES AND ADD TOMATO CHILI BLEND TO HOT OIL AND FRY TO REMOVE ALL WATER FROM THE TOMATOES AND IT TURNS INTO TOMATO PUREE ( NI PERSONALLY DONT REMOVE ALLLL WATER JUST MOST OF IT ABOUT 10-15 MINUTES OF FRYING IS ALL I DO)
HALF COOK THE SPAGHETTI IN WATER AND RINSE OFF ALL THE STARCH IN COLD WATER DONT WANT STICKY FOOD!!
PLACE THE WASHED SPAGHETTI IN A LARGE POT, ADD MASHED UP CORNED BEEF SO IT BLENDS VERY NICELY WITH ALL THE SPAGHETTI AND ADD THE FRIED TOMATOES ALL OF YOUR VEGETABLE (ESPECIALLY IF THEIR FROZEN YOU GOT TO ADD THEM NOW BUT IF THEIR FRESH OR UNFROZEN THEN U CAN ADD THEM HALF WAY AS THEY WILL BE OVERCOOKED) ADD ALL OF YOUR SPICES AND SEASONING TO TASTE YOU CAN ADD MORE AS YOU GO ALONG AND THEN ADD STOCK AND COVER AND COOK TILL IT HAS ALL TURNED INTO DELICIOUS HOT SPAGHETTI (ABOUT 20 MINUTES)

ITS THE SAME METHOD AS COOKING JOLLOF RICE BUT WITH A TWIST  ALL THE CORNED BEEF HAS INFUSED WITH THE SPAGHETTI IT REALLY IS DELICIOUS AND CHEAP TO MAKE TOO, 

WILL ADD A PICTURE NEXT TIME I COOK IT

I made chicken alfredo with baby asparagus not too long ago. I can submit my recipe as well:

• 6 skinless, boneless chicken bosom halves - cut into cubes
• 6 tablespoons butter, divided
• 4 cloves garlic, minced, divided
• 1 tablespoon Italian seasoning
• 1 pound fettuccini pasta
• 1 onion, diced
• 1/3 cup all-purpose flour
• 1 tablespoon salt
• 3/4 teaspoon ground black pepper
• 3 cups milk
• 1 cup half-and-half
• 3/4 cup grated Parmesan cheese
• 8 ounces shredded Colby-Monterey Jack cheese
• 8 ounces shredded Romano cheese
• fresh spinach

USE A LARGE SKILLET
1. Combine chicken, 2 tablespoons butter, garlic and Italian seasoning over medium heat. Cook until chicken is no longer pink inside. Remove from skillet and set aside.
2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
3. Meanwhile, melt 4 tablespoons butter in the skillet. Saute onion and 2 tablespoons garlic until onions are transparent. Stir in flour, salt and pepper; cook 2 minutes. Slowly add milk and half-and-half, stirring until smooth and creamy. Stir in Parmesan, Romano, and Colby-Monterey Jack cheeses; stir until cheese is melted. Stir in chicken mixture and spinach. Serve over cooked fettuccini.

As for the asparagus, I just cleaned them and steamed them for a few minutes lol.

It's supposed to serve about 8, but I beg to differ. It makes a lot of food! Yummy food

My dad likes asparagus, he could like this. BTW, the taste remains intact even without garlic, right?

Fettuccine Alfredo
Ingredients
Fettuccine or penne
1 cup of heavy whipping cream
4 Tablespoons of butter
Freshly grated Parmigiano-Reggianno cheese
Freshly grated nutmeg
Salt
Freshly grated ground black pepper
Fresh parsley chopped

Procedure
Cook the fettuccine in boiling water until al dente. [Around 10 minutes]
In a sauce pan large enough to hold all the pasta, melt the butter on low heat.
Stir in the cream until slightly bubbly.
Season with nutmeg, salt and pepper.
Drain pasta and place it in the cream mixture stirring to coat.
Slowly add the cheese until the mixture is light, creamy and melted through.

Place the fettuccine alfredo in a serving bowl and garnish with parsley. Serve with extra cheese, if desired.

Dear Linda, I read with sadness the interview Odi granted another online site, (that is if he really said those things) and decided to react. He said in the interview that our marriage was dissolved in 2007 because I was having extra marital affairs. He's a big liar that has lost all my respect. How is this possible when our second child was delivered in September 2008? And how is it possible that our marriage ended in 2007 when we did our traditional in absentia in March 2009? (attached are pictures of our traditional marriage in Benin). Is it possible for a man to catch his wife having extra marital affairs and still pay her bride price? He paid my bride price in 2009 and I only recently found out he was also dating Mercy at the same time.

Odi also said in the interview that he has not been in contact with us since 2007. Did he really say those things? Linda, I sent you pictures of our son's one year birthday in which he was present.

How come he was here in Canada, November 2008 to see the new born baby and left in December. He later visited in May 2009 and we celebrated our daughter's 3rd year Birthday together @ Christ Embassy here in Canada . He came back in August 2009 during Pastor Chris programme and witnessed our son's 1st year birthday. He was last here in December 2010.

I only started noticing a distance from him last year, and when I asked him what the matter was, he didn't say, only for him to try to drag my father to court to sign divorce papers last month.

I heard he also said our marriage was an arranged one. How can, when we had a child before we wed in 2006.
I am not trying to force him to stay with me, all I want from him is to respect me and my children and divorce me properly before marrying another woman.

He, Prince Odianosen Okojie decided to clear the air by telling his own part of what has become a rather messy story.In a recent interview, Prince Odianosen Okojie stated without reserve that his relationship with Lovely Okojie ended in 2007. A lady called Lovely Okojie claims to be your legally married wife. She said in an email to us that you're planning to marry another wife without her knowledge and consent. Is that true?

Thanks for asking the true state of this scandal, yes I know the said Lovely, she is not my legally married wife anymore, the pictures and relationship she is talking about was dissolved in 2007.

Once and for all, clear the air about your relationship with Lovely Okojie. Are both of you dating, married, or divorced, what's the situation?

My earlier answer to your question says it all; I am no longer with her.

Lovely Okojie said on the phone with one of our reporters that you told her that Mercy Johnson was just a business partner and that you were in Nigeria to do some contracts and suddenly she started reading online that you're going to marry her. Is that true?

We broke up in 2007 when she was having extra marital affairs, after the demise of the relationship, I relocated to Nigeria, and later heard she has moved to Canada, I can't be living with her when she is based in Canada and I have been living in Nigeria all this years.
I met mercy in 2008 and we've been dating since then, Lovely surely knows why she is coming up with such lies to destroy my relationship, because I told her about this wedding myself last year 2010.

She supplied us evidence of your marriage to her and photographs of you playing with your lovely kids – and that touched the hearts of our readers. What do you have to say about that, are the proofs real?

Yes they're real pictures taken long time ago, I love my kids and I always try to be in contact with them.

Elsie Uzoma Okpocha, the beautiful wife of comedian Bright Okpocha aka Basketmouth, has given birth to a baby girl in the US. She gave birth on August 5th, 2011 and the couple's new bundle of joy have already been named Janelle.

Bright and Elsie, who got married in Nov 2010, already have a son named Jason.
