In that case, I have no tried recipe. But here's one, with ham, I'd like to try out. Ingredients 12 ounces whole grain elbow macaroni (dry) 12 ounces 1/2-inch diced ham, such as Farmland 1 can fire-roasted diced tomatoes, drained 1 medium onion, chopped 10 slices provolone cheese 10 slices American cheese Instructions 1.Preheat oven to 325F degrees. 2.Cook macaroni according to package directions; drain. 3.Spray a 9x13-inch baking dish with cooking spray and spread half the drained macaroni in the bottom. 4.Scoop on half the onions and half the tomatoes, dolloping evenly over the surface of the macaroni. 5.Scoop on half the ham. 6.Layer the provolone on top of that. 7.Put the rest of the macaroni as a second layer; put the rest of the onions, tomatoes, and ham on top of that. 8.Top with the American cheese slices (be sure to unwrap them!!) and cover the pan with tented aluminum foil. It helps to spray the foil (underside only) with cooking spray also to help avoid sticking. 9.Bake for 30 minutes, covered, at 325F degrees. 10.Remove the foil and bake another 10 minutes. Your lasagne looks good. I never realized you could make lasagne with ingredients like; egg, Italian sausage [salsiccia = My dad and brother love this like mad, esp. when grilled], parsley etc.The original directions call for the lasagna to be boiled. I don't boil lasagna because I always find that it is overcooked and falls apart easily while eating.A friend once told me this. The next time I make lasagne, I'll try boiling to see the difference. I hear, for best result, add salt and oil to the boiling water in which the pasta is to be cooked. |
I soak the beans in warm water overnight and the next day wash by 'peeling' off skin. This take about 15-20 minutes. The stress that comes with preparing moin-moin. |

Tomatoe with meat sauce [ragù] Ingredients : 2 tablespoons olive oil onion, finely chopped* celery, finely chopped* carrot, finely chopped* minced or coarsely ground lean beef, veal or pork salt 1 cup dry white wine 1/8 teaspoon nutmeg maggi I do not prepare the ingredients with asterisks myself . . . Add the chopped onion, and then carrot,celery and sauté briefly over medium heat until just translucent, not browned. Add the minced beef, breaking it up with a fork or wooden cooking spoon. stir and cook only until the meat has lost its raw, red color. Add the wine, turn the heat up to medium high, and cook, stirring occasionally, until all the wine has evaporated. Turn the heat down to medium, add the tomatoes and stir thoroughly. Add maggie cube(s) and nutmeg, black pepper any other desired seasoning. Cook, uncovered, for a minimum of 30 minutes to 40 minutes, stirring occasionally. Taste and check for salt. Lasagna Ingredients: Mozzarella [square slices] Grated parmesan cheese Pasta sheets Besciamella Allow your sauce to cool so it doesn't 'melt' the pasta-> https://www.rawfish.com.au/images/finish-with-pasta.JPG preheat oven to 200°C Put some sauce in a plate, add some besciamella and mix thorougly Cover the inner part of a rectangular baking dish with a little quantity of oil to prevent burning. Add a layer of the tomato sauce [already mixed with besciamella] to cover the surface of all the pasta sheets and sprinkling over them some pieces of mozzarella and grated parmesan cheese. Repeat these layers until you reach about a centimeter below the verge of the pan, finishing with the sauce, mozzarella and grated cheese. Cover loosely with foil and Place into the pre-heated oven and allow to bake for about 20-30 minutes, until bubbling. Remove foil and increase heat to 350°C and allow to bake for another 6-7 minutes. Fridge, deep freezer are too important to be absent in the house. If you want my candid advice, get at least, a refrigerator. ![]() Garden egg sauce Wash and boil the garden eggs and fresh pepper until they are soft. Remove from the heat and mash into a smooth puree. Meanwhile, your fish, gizzard etc are being cooked. When fish etc are ready, fry in hot oil. Remove 'em and add sliced onions and add the mashed garden egg. Add ground crayfish, little salt, maggi cubes, curry* and other seasoning. Stir and allow to cook for about 10 minutes in low heat. Make sure it is thick and tasty. Remove from heat and serve with ripe boiled plantain or yam. |
Lemon Pasta with Smoked Salmon Trim Ingredients: Spaghetti 8 oz smoked salmon trim, cut into 1" or so pieces. salt for water 3 tablespoons olive oil 1 clove garlic, minced zest of two small lemons juice of three small lemons 1/4 cup chopped parsley 1/2 cup plus a little grated Parmesan cheese salt and pepper to taste Procedure: In a big pot of well salted water, cook your spaghetti until al dente. When the pasta is approaching doneness, heat the olive oil over medium-low heat in a large skillet. Add the garlic once the oil is hot and sauté for two to three minutes. Don't burn the garlic. Add salmon and allow to cook for 2-3 minutes. Reserve a cup of the pasta water. Drain and add the pasta to the skillet. Toss well. Add the remaining ingredients. and toss well. If it feels like you need more sauce, add a little of the pasta water, which will be nice and starchy and help the sauce stick to the noodles. It's not fair to you to restrict yourself to just stew-rice and soup-swallow. Do you have a deep freezer? Yes? Here's what I do, it could be of help to you, too. During the weekend, when you're probably less busy, cook stew, beans, soup, garden egg sauce etc. Divide each of 'em in small containers and put in the freezer. During the week when you're busy, they will come in handy. All you need to do when your stomach cries is boil yam, rice, make eba etc to complement whatever you already have in the freezer. Advantages: 1) It saves time 2)You do not have to constantly eat just rice [''by force''] until the stew finishes and eba until the soup finishes 3) You have variety, contaning diverse nutrients, to choose from. Have some fruits and veggies in the fridge too. Breakfast is important, maybe you should also start taking your breakfast [even though I'm also guilty of missing mine]. It doesn't necessarily have to be something heavy, specially prepared or time-consuming to consume. A glass of juice and biscuit is fine, tea, even fruits etc. |
