I can relate, I was comparing my boyfriend's passport to mine, even though I couldn't understand some words I am sure it makes sense lol.

Ahh, I cook jollof every week since someone's son tasted it once cheesy

This is my second try on fried rice, and I decided to make the famous combo of fried rice and jollof lol.

My newest method now is I roast my vegetables b4 blending, it saves more time in cooking and gives that natural smokey taste.

Ohh sorry I forgot.

First thing I do is I blend my chilling pepper and tomatoes and onions, I use green chilli pepper because it is hard to get red chilli here, please note b4 grinding my pepper and tomatoes I boiled them to able to blend smoothly and makes it a bit thicker.

After that, I boiled my chicken using just curry, seasoning and salt and keep my broth.

The next thing I do is to fry my onions in groundnut oil for like 2 minutes then I add my thick tomatoes paste and stir for around 3 to 5 minutes.

After that process, I add my blended tomatoes and water and it boils for around 20 minutes depending on quantity then I add my seasoning cubes, curry, salt, chicken broth and my fried chicken and make it cook for another 20 minutes till the soup it ready, when my soup is done I remove the chicken from the stew and the I put my washed rice and stir with wooden spoon then I add my remaining chicken broth and water, I add my ingredients again for jollof which is thyme, curry seasoning cube and salt and stir together and cover and cook for five to 10 minutes then I add my sliced tomatoes and onions and put it on low heat to steam, during this process, I make sure to cover my pot tightly, it is more preferable if you cover with foil to avoid air so it can steam well, you can it steam for 15-20 minutes, I make sure to stire between the time in order to avoid burning on just one part, so I steam until the Ingredients penetrate with no traces of water.

Make sure you avoid adding water later, the first water added for jollof should be the only water, you just need to steam to make it soft and to your desire texture, if you can follow this part it should come out well like these pictures.
