I have been eating it for years - I eat my grit with beans. I make mine light and with a little sugar.
I like the white grit more than the yellow grit.

I sure will. It is simple - the usual naija style beans and then grit on the side. Nothing fancy.
Polenta is corn yeah - they give them too much names
I don't eat it the way the Southerners do eg with cheese, butter, etc

Grits is also corn but the white one right. I cooked mine and put a half tablespoon of butter on it. Might try to add cheese next time.

You live in one of the Southern states, right?

Oh mashed potatoes me I thought it was normally yellow.
Last year we planted potatoes and harvested a lot we were thinking of what to do with the potatoes before they spoilt I googled how to prepare mashed potatoes and I wanted to try it. But we grinded the potatoes instead and turned it into flour.
I'll try to make this mashed potatoes one day.

Marshes potatoes is made from potato flour. You simply add water * and stir to cook. And voila! You have marshed potatoes.

Another easier way I do mine is simply to boil my whole potatoes, peel the skin once it is well cooked and then marsh * using potato masher or any tool that will do the job.

* Add milk or cream if you prefer, while mashing or stiring to add a creamy taste to your marshed potatoes

But when I put the potato flour inside boiling water, it gave me something like semo.

And I thought the only way to make mashed potatoes is to boil it like you said and mash.

That something like semo is mashed potatoes.

It can be made with either the flour or directly from the potatoes themselves.
