The volume that Russia is unable to sell to Europe, will be transferred to the open market (Spot market). Spot market currently trades at $1,100 per metric ton while Russia's sells to Europe at fixed contract averaging $300.

Actually Russia has been loosing a lot selling to Europe, but the benefit has been that the the market is stable and sales via fixed contract is guaranteed as compared to spot market which is volatile. So no loss for Russia, but major losses for Europe as their competitiveness will decline due to extremely high energy costs associated with importing LNG from Qatar and US.

Europe's biggest mistake is following the US, who is only out to rip them off with a smiling face.

I know this is an overly simplified solution but then countries that have no diplomatic relations sometimes use a mutually friendly country to do their transactions. I think (not sure) US uses Qatar for Iran issues. Similar structure exist for North Korea I think.

It's not as easy as you think, getting gas elsewhere will be extremely expensive and trust me, it's not worth it..money that would've been used to pay for months if not years of gas supply?
Who is willing to spend those on laying new pipe lines? Not from one country, but several, cuz I don't think theirs any other country that can single handedly supply the whole of Europe with gas....they will need lots of time and money to do that, they projected 2030, if they are fast enough let's assume by 2027, but until then, they have to succumb to Putin's demands or maybe negotiate.
