Hello, mate. I just wanted to say that you have a lovely handwriting. It's so neat and clear, I can read every word without any trouble. You did a smashing job giving details on the recipe and how to go about it.

I'm curious to know how you were able to know the exact value of butter, almonds, boiling degree and stuff like that to add. Did you use a scale or a measuring cup? Did you have a thermometer or did you just eyeball it? You must have a quite a lot of experience in baking to get it so right.

By the way, I hope you don't mind me saying this, but I will call this thing you prepared a cookie and not a biscuit. There's a difference, you know. A cookie is soft and chewy, while a biscuit is hard and crunchy. A cookie has chocolate chips or nuts or raisins, while a biscuit has jam or cream or cheese.

Blimey, I don't know what country you're from or what you call it, but what you've prepared is definitely not a biscuit. It's a cookie, mate, and there's a big difference between the two.

A biscuit is a hard and flaky baked, made from flour, butter,and sugar as the main ingredients. It's usually thin, crisp, and not very sweet. Perfect for dunking into a cuppa or spreading with jam or butter. Notice biscuits are often shaped as discs or ovals and have a smooth surface, exactly opposite of what you have there.
Digestives, rich tea, hobnobs,shortbread, ginger nuts. These are biscuits.

A cookie on the other hand is a soft and chewy baked good that is made from a thick and rich dough that contains more fat and flavourings than biscuits. Usually it's loaded with goodies like chocolate chips, nuts, raisins, or sprinkles. Moist, decadent, and satisfying.
You see, most cookies are often shaped as rounds or squares and have a rough surface. Exactly what you have there.
Chocolate chip, oatmeal raisin, peanut butter, snickerdoodle, macadamia nut. These are cookies!

What you've made is clearly a cookie, not a biscuit, because of its almond content and preparation method. Almonds are not a common ingredient in biscuits, but they are in cookies. They add more fat and flavour to the dough, making it richer and denser.
Also, the way you've prepared your dough is more like a cookie than a biscuit. You've used soft butter and creamed it with sugar, then probably added eggs and vanilla. This creates a moist and sticky dough that needs to be chilled before baking.
Biscuits use cold butter and cut it into the flour, then add just enough liquid to form a stiff dough that can be rolled out and cut into shapes.

It's pretty obvious. Cookies are more indulgent and chewy, while biscuits are more simple and crisp. What you've made is definitely a cookie, so don't try to pass it off as a biscuit. You'll only get some funny looks from the Brits. 😉

Make your batter very thick, mine use to smell like egg roll because of the consistency, it wasn't thick enough. Also avoid over mixing.

Since March, some stuffs were sent to me through the Nigerian Post office in benue and up till now, it's been one story or the other. Anybody know how I can get their customer care handle pls. I have never experienced this before. Maybe because I have never used benue. I have read here at one time that when you write them through their handle, it helps as hq looks into it immediately.

The Nigerian post office is the most unreliable thing in the world, you should have used any of these courier services that send things per kg.

I have only used them once and it ended in regret.

This is the second one I'm doing.
All 25kg.
Will do 10kg of red millet too. I love my pap with red millet.


For some of us that hate powdered pap( I'm actually skeptical of drinking pap I didn't know its origin hence I love making mine) staying in cold regions
As long as you have freezer, summer is the best time to soak corn. Keep under the sun and keep on changing water. If its naija, 3 days is OK to grind but these cold regions take more time for the corn to soften a bit. I did 3 days and it spoiled my blender b4 somebody told me of this secret. Some said to add lukewarm or boiled water. I blended 8 days after soaking. Used 2 blenders. One for coarse blending while the other for fine blending. Powerful blender for fine blending. Give the blender time to cool down intermittently.
Freeze and enjoy.
